    Does anyone have a low carb recipe? Is it possible?

    Do you want a recipe for the cracker or the crumbs to make a pie crust?

    For the crumbs to make a pie crust you follow a regular graham cracker crust recipe but sub a mix of equal parts almond flour and hazel nut flour for the crumbs and Splenda for the sugar.

    If it's the crackers you want here is a regular recipe. You can sub low carb ingredients and see what happens. If you give it a try let us know how it turned out.

    Homemade Graham Crackers Recipe

    Ingredients
    1/2 cup all-purpose flour
    1-1/4 cups whole-wheat flour
    1/2 cup light rye flour (rye flour can be found in health food stores)
    1/2 cup sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/4 teaspoon ground cinnamon
    1/2 cup (1 stick) cold butter, cut into pea-size bits
    2 tablespoons honey
    2 tablespoon molasses
    1/4 cup cold water
    1 teaspoon vanilla extract


    Instructions
    In a food processor or the bowl of an electric mixer, mix together the flours, sugar, baking powder, baking soda, salt, and cinnamon. Add the cold butter and mix or process until the mixture resembles coarse meal. Add the honey, molasses, water, and vanilla. Mix until the dough comes together in a ball.

    Between 2 sheets of waxed paper or plastic wrap, roll the dough 1/2-inch thick. Chill for 1 hour, until firm. Set a rack in the middle of the oven and preheat to 350°. Lightly flour the dough and roll 1/8-inch thick. With a sharp knife or cookie cutter, cut into 2-inch squares. Arrange the crackers on nonstick or parchment lined cookie sheets. With a fork, prick several holes in each cracker. Bake for 15 minutes, until lightly browned at the edges. Remove from the oven and let cool in the pan.

    Yield: 48 crackers

    Lol, that's what I was trying to figure out; if I could make them low carb. Someone out there must have done this! I wasn't able to find a recipe doing a search but haven't given up yet. Thanks.

    Once we get the low carb graham crackers, how about lc marshmallows and Hershey bars???? Camping just goes with s'mores.

    Pongie, Hershey already makes a low carb chocolate! Of course, when it comes to chocolate, you can do MUCH better than that. Try Green & Black's 72% dark chocolate. Now that's chocolate! Lindt Excellence is good to in 85%. That's REALLY dark though, most people wouldn't like the 85%.

    MarcieLynn...I cannot believe that this is possible...low carb s'mores??? Sheesh...just when you thought it was safe to get in the water.

    I think my success will only happen when I remain true to the credo that I must give up junk fook to survive and be healthy.

    But with low carb s'mores out there as a possibility, I might have to revise that to allow for a little of the junky stuff...just in remembrance of those olden days.

    I would like to find a graham cracker recipe. I've never really thought of graham crackers as junk food--they're not as sweet as cookies, and have graham flour in them, which is whole wheat.

    Marshmallows are a different story, however...

    Terra, just looking at that recipe above, it would be a very tricky conversion. There are so many variables there. LC'ing a regular cracker recipe was tough enough, but that one has so many items that would have to be changed...

    I thought I might give it a go, but I'm just not up for that kind of a challenge yet, sorry :(
