Wow! I finally got around to trying this last night and it was so good! My powdered cocoa is dutch-process and very dark and intense so I used DV caramel syrup instead of the water and frosted it with a little cream cheese mixed with DV vanilla syrup. I'll have to try out some of the other variations that people have come up with.

Susan, great idea about using this at birthday parties. I'm going to do that from now on.

Our kitchen remodel is finally done enough that I could start cooking again and I tried this. OMG this is terrific.
I used Maggie's variation with SF DaVinci Chocolate syrup and added a few walnuts. A smudge of whipped cream (actually a big glob) and I was set. This is amazing.

I wanted to take this to a party I was going to, so I quadrupled the recipe, put it in an 8x8" glass pan and microwaved it for about 5 1/2 minutes. It turned out great!!

You probably could cut it into serving sizes and freeze it like the Mock Danish.

Mickyrat,
Thank you so much for introducing us to the 3 minute chocolate cake I made it tonight and I want you to know I am the Queen of the house. It was absolutely wonderful. I made a cream cheese icying I found from Marcie's post and added chopped toasted pecans on top chilled it about 20 minutes and Oh My Goodness. Folks you've got to try this why go back to our old way of eating when this is the life!!!

And I made this last Thursday for my boss, whose birthday was on Friday (our day off) - I doubled the recipe and made it in a round, straight-sided cereal bowl, which worked great, and "frosted" it with Twist (yes, I know, the dreaded Maltitol but it's such good stuff and I used very little!) and he was thrilled with it. He's a LC'er too and figured he'd given up chocolate cake for good!

So thanks again, Mikey, for your excellent "copy and paste" skills!

This was delicious! Even my hubby liked it!

I am thinking it would be fun to try making "cup cakes" with it. I have small pyrex dishes ... like for sauces. Good for parties or to have a couple on hand.

I didn't have the almond flour so I used Atkins pancake mix - any port in a storm when it is chocolate! It worked great! Thanks!

Ok,
I made this little 3 min chocolate cake and of course, I did a little tweak I think it may be better than the original, and maybe someone has already done it, but I don't recall seeing it anywhere. I added 1 T milk and egg protein powder and in place of the melted butter, I used 1.5 T VCO, and in place of the water, I used 1T Davinci's sf vanilla syrup. Wow!!!! The rest of the recipe is the same. I have another idea for frosting, so if it comes out good, I'll post it tomorrow

The only place i have found Almond flour is at our local Mininite (like amish) store... When i went to my sisters over an hr away we went to a health food store and found some there but it wasnt in a clear bag and i like seeing what im getting.. ill stick to buying it where i know i can get it.. an d more local...

Just wanted to note that I doubled this for Easter, served it warm with a peanut butter sauce which consisted of cream, pb, splenda & vanilla. Everyone raved and I didn't even say it was SF
