| As many of you have also, I have struggled with peeling hard-boiled eggs. Sometimes using older eggs helped the peel come off, sometimes it made absolutely no difference. Recently, I started buying organic eggs, (vegetarian, cage-free eggs). They are supposed to be healthier and a bit lower-fat. I started hard-boiling these brown eggs and have never had a problem with the peel coming off. I almost always had one with the white eggs. So, I do not buy the white eggs anymore and stick with the vegetarian, cage-free eggs. It makes life simpler.

| Kokle, I bought some organic eggs at Kroger a few weeks ago. Checked the price yesterday and it increased 40cents per dozen to $2.39. They are good and seem to have a thicker shell. I bought a new egg slicer at Linens & Things last weekend. It has THE neatest feature...an egg piercing mechanism. The base to the slicer is spring loaded and you simply press the wide end of the egg down on it. You do this before you boil them, eggs peel so easily. |

| I agree. In the health food section of Kroger is where I find these eggs. They just seem to taste better and not a lot more expensive. At my store it's $1.99 a dozen. Renee |

| I buy the Eggland brand, which are also vegetarian fed. They are so much better! The more people who insist on good quality food, the more we'll have available. |

| I have never had a problem peeling eggs since i started following directions i read somewhere I put eggs in a pot, then cover with cold water -- bring to boil over high heat when boiling, either turn off heat or simmer on very low heat for 20 minutes (i've let them sit in the hot water longer than 20 with no problems though) then pour out hot water, and add cold water to cool eggs -- i do this about 3 times until eggs are cool to touch -- then refrigerate ever since i began doing it this way -- the peels come right off |

| Well, I never had problems with peeling eggs till I started buying fresh-off-the-farm eggs! I've tried all sorts of tricks to no avail. Maybe I need to go buy a mechanism to peel my eggs! :o You got the name of that gadget Susie? |

| my darlin honeymoon just surprised me with TWO of those gadgets yesterday.. he hadnt boiled the eggs and put them in ice water like the packaged said to do... just grabbed a couple from the fridge and went at it.. well.. some came out right away... some came out half peeled.. and some spit out with the shell mangled but intact! *LOL* it was worth the price of admission to watch him struggling with it tho.. i laughed for 15 minutes straight..he might try it again with a whole batch done the way the instructions say.. but i am not holding my breath..*L* it did come with a nifty egg slicer tho.. that thing worked great..*grin* Last edited by heykim; 04-09-2004 at 04:53 PM. |

| My dh bought me the EGGSTRACTOR too... the secret is that the eggs need to be REALLY well hard-boiled. Another hint that I learned from another forum (a cooking site) is that eggs hard-boil and peel easier if they are 2 weeks or more OLD. Fresh eggs - like your farm fresh eggs - stick to the shell more when boiled. Don't know what the scientific reason is behind it all, but it seems to work. I used FRESH eggs and boiled them, let them site 20 mins and run under cold water (how my mom taught me) and it didn't work with the EGGSTRACTOR. I did it again using 2 week old eggs (hard to let them age in a LC household!) and cooked them differently: boil for 15 minutes and then run under cold water and it worked PERFECTLY. The kids love to use it and now our puppy knows when we're peeling eggs (the whooosh POP sound from the EGGSTRACTOR) and runs out hoping to get a yolk. lol Definitely worth the $$$ for the ease of peeling AND the entertainment value!

| <<now our puppy knows when we're peeling eggs isnt it amizing that a dog/pup knows when eggs are being cracked i wonder what it is about dogs and eggs |

| I bring my eggs to a boil and then simmer about 20 minutes (or you can cover them like Teresa.) When you go to peel them crack them lightly all over before you begin to peel. I find that helps. My egg salad recipe for two: 4 hard boiled eggs (I discard two yolks because of hubby) 1/4 tsp Dijon mustard 1 tbsp. sweet relish 2 strips of bacon (microwaved) mayo to taste chopped celery I chop my eggs coarsely because I like chunky egg salad I only add enough mayo to make it moist, not mushy Mix all ingredients except bacon. When ready to serve, I break up a slice of bacon and put it on top of open face sandwich, one for me, one for hubby. This way we're not eating too much bacon and keeping the salt down. |
