Let's face it....the Mock Danish IS a big part of LC eating...and the only thing that keeps us on the straight and narrow sometimes...LOL
There seems to always be someone in need of the "recipe", so I was thinking, maybe make a "sticky note" and put it in this forum?
Anyway, here is the recipe.

MOCK DANISH
3 oz cream cheese, softened
1 egg, at room temp
2 pkts splenda, or 1 splenda and 1 pkt steviaPlus
1 tsp vanilla

Mix all together well, and pour in ramiken sprayed with Pam; cover with wax paper and microwave 2-3 minutes on 70-80% power.(times may vary according to your MW oven).

Variations of the Mock...

add 1/2 tsp cinnamon with 1 tsp vanilla for a
French toast taste

add 1 T lemon juice and some lemon zest for a lemon cheesecake type flavor

add 1-2 tsp strawberry extract for a strawberry cheesecake type flavor.

make a plain vanilla one and "frost" it with 1T creamcheese, 1/2 tsp cocoa, 1-2 pkts of splenda

add 1 tsp orange extract with 1/2 tsp cinnamon for a orange spice taste

add 1 tsp cocoa powder, 1 tsp vanilla, and a few instant coffee granules for a mocha flavor

serve the above cold
serve the above hot
with or without butter
with or without your favorite sf Davinci's
if it is to "eggy" for your taste, try using the egg white only

And finally, triple the recipe, and cook in a 5X7 size casserole dish, and cut into 4 squares. Wrap individually and freeze for a quick breakfast on the go. Just pop in MW, heat and eat.
As always, calculate the carbs of any additions or subtractions you do.
Whewwwwwww.......I think that's every thing I know about a Mock Danish...LOL

i cant believe i have never tried this yet... but then i never ate danish either.. is that what it tastes like.. i am thinking along the lines of those icky looking sweetrolls with some kinda colored gel stuff in the center...

Heykim - I finally made this last night. I added a teaspoon of Options Mint Chocolate Highlights for flavour and while it's an odd taste, it's not unpalatable. Am definitely going to make this again.

I made this for the first time last evening. It was tasty. Thought it would be great at breakfast with the cinnamon as suggested and I also thought it would be nice then with some SF maple syrup drizzled over.

I add 2TBS. of flaxmeal to mine to give it fiber. It also makes it cakier. I have also added 2 TBS. of wheat gluten, 1 tsp. of baking powder, 2 TBS. of almond flour, and it poofs up just like a real cake and even tastes similar to real cake. It makes a wonderful base for "Strawberry Shortcake" oooooooooooh lala!!!!!! For the Strawberry topping I cut up about 4-5 reg sized strawberries. Then I whiz about 3-4 frozen (thawed) strawberries with my stick blender with 1/2 tsp. xanthan gum (health food store) and a couple pkts of splenda or about 1 tsp of splenda to sweeten. Then I mix the fresh strawberries with the frozen "sauce" and top the "cake" with that. Then I whip up some whipped cream and top it all off with that. Low-fatters, eat your heart out!!!!!!!!!! It's absolutely heavenly. And what better time than summer to have strawberry shortcake, eh??????????

I don't know what I would do without my Mock Danish and its variations!!! I guess I would starve!!! LOL

1 packet of Splenda is roughly equivalent to 2 teaspoons (@10mL) of sugar/sweetness or also 2 teaspoons of Splenda granular (also known as spoon-for-spoon).

had one last nite for the very first time... in almost a YEAR of low carbing i never did make one till last nite.. i used vanilla and poured some atkins l/c syrup over the top...
i pray i am never that desperate for something different again..*L*

Atkins syrup is *disgusting* no matter what you do with it (as are most products with the Atkins name). It tastes like water with a sugar packet dumped into it. Look for Cary's Sugar-Free Pancake Syrup in your local grocery store.. Closest thing to "real" syrup I've found yet, and is even semi-thick.

I'm not one for Mock-Danish on a regular basis, but when it's 10:30pm on New Years day, and you're back on induction, and desperately need something sweet (that's not Jello), a Mock made with strawberry extract gets the job done...

hmmm will have to try to find that syrup... but as for the mock danish? not thinkin so.. when i was desperate enough to try it.. after a YEAR of not trying it.. well..

I'd blame your microwave. It's not exactly Dunkin Donuts, but it's not godawful, either... (I don't do it on medum power, either.. I have a 1200 watt microwave..crank the hell out of it for a minute and a half, and all's good.

I hate to ask.... Atkins chocolate syrup?

Amusing story, nonetheless...

hate to ask ? hate to ask what? atkins chocolate flavored syrup is what i used.. i also have raspberry and i think caramel? bought em all when i first started to add to club soda to replace pop.. but gave that up in favor of water..:-)

Kim, maybe it's the syrups and not the Danish itself............I prefer the Davinci or Torani syrups myself. I just love it topped with strawberries and cream!!!!! And Cocoa powder............can you say "Chocolate Cake???"

Just a thought on the Mock Danish...I love it and I dont even make it fancy......I just use cream cheese and egg with a little vanilla and a little splenda, pop in the Micrwave for a minute and enjoy.....It has saved me many times.....Hey I even had it for supper tonight made with 2 eggs...didn't really feel like cooking much tonight
