Marcie, as you know, DH and I love your Mashed Cauliflower recipe - even though, after 2 glasses of champagne at my Dad's a week or two back, I actually FESSED UP to DH that they contained - ewwww! - BRIE CHEESE!
Well, I made a batch a couple nights back, and had leftovers. I also had added a couple tablespooons of psyllium husk to the original recipe to see what it would do to the texture - a bit TOO much, next time I'll only add 1 tablespoon - anyway, tonight I was making chicken-fried steak, so I took the leftover mash and added an egg and about 1/4 cup Parmesan to it - plopped 4 scoops of it into a mixture of hot EPCO (expeller pressed coconut oil) and EVOO (extra-virgin olive oil, only used that because I was OUT of regular! Gasp!) and fried them up til they were getting crispy, turned and cooked the other side.
Now, next time, I'll add some ground pork rinds or vital wheat gluten or wheat protein isolate, because they REALLY didn't want to "hang together" well enough, but boy were they TASTY!
So thanks once again for the terrific base recipe and this invites some more experimenting!

I've thought of trying to make these too, with some minced onion in them, but I never have any leftovers.
