Default help with kefir

I'm going to be venturing into the world of Kefir soon and i could use as much help as possible. I know you can drink kefir and make cheese and eat the grains but i don't know "how" to do these things. I went to the one website that people normally suggest (can't think of it right now) but its just confusing me (too much info) I don't know the basic care of kefir how to store it (if i can) do you have to make kefir all the time? What the nutritional facts are ( i heard like 4 carbs per cup) isn't that a large amount per cup? If anyone can help me out with information i would be greatly appreciative..
Thanks

Hi, Kat.

The site you found with "too much information" is probably Dom's Kefir Site.

Don't be overwhelmed by the huge site. Just go to the link I gave you and read the few links under "HOW TO CULTURE REAL TRADITIONAL KEFIR" That will give you all the information that you need about equipment, brewing, how to know when it's done, and how to use, rest and store Kefir grains.

Then explore the rest of the site at your convenience.

Meantime, if you search this forum for "kefir", you'll find a number of interesting threads. Links to some of them are here:

Hope this helps you to get started! There's also a stickie, at the top of the caveman forum, with all the members who have kefir grains to share and will be happy to send some to you for the cost of the postage.

HTH!
