Cauli Browns
This is a great substitute for hash browns. I made it the other evening and everybody loved them, even my non-LCer.
Wash a whole head of cauliflower;
Chop the cauliflower into small pieces;
Heat oil and/or bacon drippings in skillet;
Add the cauliflower and fry. Add desired seasonings.
If you're past induction, try adding some onions.
I would suggest using more than one head of cauliflower if there are 3 more hearty appetites to serve.

I forgot to add that I actually fry my cauliflower until it gets a little brown, love the taste.
I made fried cauliflower once and added chopped cabbage and green peppers, was a hit too.
After frying the cauli, for a twist sprinkle shredded cheese on top...cheesy browns!
Cauliflower and cabbage are delicious when fried in a skillet, like potatoes!

I often fry my cabbage but I never though of frying Cauliflower. Thanks Susan

That sounds yummy!
I also like to cook the cauliflower as two halves and then throw ham & swiss cheese on top. Then put it in the broiler to melt the cheese and brown it a bit. Sprinkle some i butter fried low-carb bread crumbs over it and call it a meal!
