| Moved from old BB 4-9-04 My sis, DJ, posted this recipe over on our old forum. It was quite popular and since there have been some requests for cake lately and the holidays are ahead, here is an encore appearance: DJ?s take on Queen Mum?s Favorite Cake (a flourless chocolate cake) Maintenance: Absolutely OWL: w/discretion, i don't see why not, UNLESS you still have trouble w/cravings Induction: definitely not 14 oz bittersweet chopped chocolate* ? c plus 2 T unsalted butter , at room temp - (no subs) 1 t cinnamon -- mix with the guar 1 ? t guar** - rub into the butter until they blend well (opt) (0 carb -13.5 gfiber) 10 lg egg yolks 1 t Stevia extract (equiv 1 c sugar) 1 T vanilla, 1 t lemon juice, grated zest of 1 tangerine 10 lg egg whites, ? t Stevia extract (equiv ? c sugar) 2 c heavy cream - whip *Buy for this "cake" the very best chocolate you can afford - King Arthur?s extreme dark chocolate chips were good. (King Arthur?s Flour Co) **i added the guar (or xanthan) for its fiber, & to compensate for the lack of sugar - it helps assure smooth texture. Arrowroot might work if you are allergic, or can?t obtain the gums. Oven: 250F; cut waxed paper to fit, & line a 10" pan w/it ; grease and flour it. (i use cocoa when flouring a pan for a chocolate cake). Melt the chocolate w/ butter in a double boiler (or use MW); allow to cool slightly; beat the yolks w/ 1 t Stevia until smooth, stir in the vanilla & lemon juice; blend in the chocolate mixture; beat the egg whites in a large mixing bowl until soft peaks form; gradually stir in ? t Stevia; beat until stiff peaks form; stir 1 c of the beaten whites into the chocolate mixture; gently fold in the remaining whites; gently fold in the whipped cream; pour the batter into the pan; bake 2 ??, let it cool completely before serving. This cake is dense, dense, & rich, of course. It?s for special occasions, (not for every day) - and a very small piece is very satisfying. If you switch from Stevia extract to an AS, don't forget to add any carbs your AS may contain. |

| I entered this into my cooking software, using splenda and xanthan (which is what I have in my kitchen right now). With 20 servings, there are 15 carbs/2 fiber per serving. Wonder if it would be good with sf chocolate? That would really bring down the carb count.

| Laly, it might. You could try hershey's baking (bar) choc or a more expensive brand, but avoid Bakers. It is nasty with artificial sweeteners. You will also need to compensate for the sweetness of the bittersweet choc. hth |
