Default Another Faux Potatoes Recipe

I made these with Easter dinner last night, everyone loved them.

I thought they were better than cauliflower.

Another Faux Potato Recipe

8 small turnips
1 tablespoon chicken bullion
4 oz. cream cheese
1 tablespoon minced chives
4 tablespoons butter
1/2 cup grated cheddar cheese
1/4 cup sour cream
1 egg
1/2 teaspoon salt
dash pepper
paprika, optional
additional grated cheese, for garnish

Choose small turnips, they have a milder flavor and will stay white when boiled.
Peel and cube turnips. Place in a sauce pan with enough water to cover. Add the chicken bullion to the water and boil turnips until barely fork tender. Turn the fire off under the pan and place the lid on it and let the turnips sit in the cooking water until you are ready to fix them.

Drain turnips and place in an electric mixer bowl. Add remaining ingredients, except egg, and beat well. Add egg and beat until smooth. Place in a well greased casserole dish; sprinkle with additional cheese and paprika, if desired. Bake at 375 degrees until puffed and lightly browned.

In my experience, even larger turnips are mild inside when cooked, but you have to peel more than just the skin. If you cut the end off of them, you'll see a "ring" of slightly darker meat under the skin. If you peel all of that away as well, what remains is pretty tame and tasty. We like to take turnips like that, and cut them into fries, microwave them for a few minutes to pre-cook them a little, then deep fry them. They still get a little "floppy" but they're good french fry substitute, if you ask me... Same with parsnips, though they need to be cooked longer in the microwave.
