| Does anyone have a recipe for batter fried fish? I really miss this! I want the coating to be really crunchy! Like they use at Long John Silvers...not a cornbread breading, but a batter dip. Can anyone tell me what to use to make a crunchy batter for frying fish? I have a recipe for a LJS type batter. Can anyone help convert it to LC for me??? 3/4 c flour 2T cornstarch 1/4 t baking soda 1/4 t baking powder 1/4 t salt 3/4 c water Thanks, Mary Last edited by luvnaz; 04-12-2004 at 04:07 PM. |

| The new Atkins bake mix might be worth a try. I saw some in the grocery store a couple of days ago and I looked at the ingredients, the main ingredient is vital wheat gluten. I use Chefs blend flour to fry with and get wonderful results, the main ingredient in it is vital wheat gluten. |

| Thanks! I just ordered the chef's blend flour and cornstarch blend so I'm on my way to giving it a try to make a batter to fry stuff with! I will let you all know how it turns out! Think of it...onion rings, fried okra yum, fried zuchinii, pepper rings, I can't wait! |

| Here's another recipe, which I have not tried: Batter For Frying Ingredients: 2 extra large eggs at room temp, separated 1/4 teaspoon cream of tartar 2 Tablespoons soy flour 1/8 teaspoon baking powder 1/8 teaspoon salt 1/8 teaspoon ground celery seed 1/8 teaspoon black pepper 1/4 teaspoon onion powder 2 Tablespoons grated parmesan cheese Beat egg whites until foamy; add cream of tartar and continue beating until stiff but not dry. Set aside. In a separate bowl beat egg yolks, then gently fold yolks into beaten egg whites, being careful not to break down whites. In small bowl combine soy flour with salt, baking powder, and spices and sift to mix well. Carefully add to egg mixture and completely incorporate. Fold in parmesan cheese. Use this as a batter for either deep or shallow frying. Try deep frying vegetables such as zuchinni, eggplant, or cauliflower. If desired, ingredients can be coated with additional parmesan cheese before coating with batter for frying. Makes 1/2 cup of batter. 6 carbs in entire recipe. If anyone tries this I'd love a review! | Pre-LC days, I made a batter for similar to Long John Silber's by using pancake batter and 7-up. You might try diet 7-up and one of the LC baking mixes. |

| Frankly, I'd try the "Real Pancakes" batter recipe listed here on the site. I might season it with some spices, but I think it'd work well. One thing about battering stuff is you want to make the pieces of meat fairly small or thin, and you want your oil fairly hot so the batter cooks and sets before it sloughs off, and the food still cooks through without burning the batter.

| Thanks, these are all great ideas. I make fried chicken with mayo mixed with egg then rolled in parmessan cheese, and we love that! But I wanted real batter fried food so I will try these recipes soon! Yes it is very tricky to get the right heat to fry, but not burn and get the batter to set up while cooking! Wish I still had my Fry Daddy! That was terrific! Is there a LC recipe for hush puppies? That would be a great meal! Fried fish, hushpuppies and coleslaw! |
