Default Banana Nut Muffins

My friends and I have been tweaking and passing this one back and forth for several days now.

The best version is the one were you chuck up a real banana into the mix, but the version I posted here is the lowest carb one. It's still very good but not as good as the one with the real banana.

If you would like to have real banana in yours, 1 medium banana has 25g of carbs in it. Just add 1 extra carb to each muffin.

Banana Nut Muffins

1cup flaxseed meal (I use Bob's Red Mill)-0
1cup Chefs blend flour-16
1-8oz pkg cream cheese-8
2 teaspoons liquid Splenda or (16 packets)-0 or 16
2 teaspoons Stevia Plus-0
2 teaspoons baking powder-1.3
1 teaspoons baking soda-0
5 eggs-3.4
1/2 cup cream-4
1 cup mozzarella cheese-1
1/4 cup vegetable oil-0
1 tablespoon vanilla-2
1 teaspoon banana extract-1
1 cup pecans-5

Preheat oven to 325?

Put all ingredients (except pecans) into a food processor and process for 30 seconds. Stop processor and scrap down the sides and make sure everything is getting mixed in.

Turn processor back on and process for another 60 to 90 seconds.

Add pecans and pulse just enough to give them a rough chop.

Spoon into greased muffin tins (do not use paper liners) and bake at 325? for 17 minutes or until toothpick inserted into the middle of a muffin comes out clean.

Bake one pan at a time.

Makes 24 muffins-1.7 carbs if using liquid Splenda or 2.4 using Splenda packets.

I love this stuff. It makes the best chicken fried steak I've ever had. It's better than regular flour for frying. It fries crisper than regular flour.

Mix 1 cup of this flour with some garlic salt, 1 T. of dried chives, 1 T. of dried parsley flakes, and about 1/3 cup of grated Parmesan cheese.

Mix 2 tablespoons of sour cream with 1 egg and beat until smooth then thin it out with some heavy cream and 1 or 2 tablespoons of water.

Dip a beef cutlet into the flour mixture and shake off any excess flour. (It's important to only have a light dusting of flour)

Then dip it in the egg mixture then into the flour again, coating it well.

Fry on medium heat until brown and crunchy on the outside and done all the way through on the inside.

I'ts so good you won't believe your mouth.

Hi BettyR - these sound wonderful. I so miss bananas - but I don't mind having a little (for taste) in a muffin. Will have to try soon.

Mom tells me congratulations are in order (and that she is VERY proud of you!)

Good job and continued success in all your endeavors.

BTW - read the ice cream post too. You guys were busy!

Thank you so much, you know how mom's are. Every momma crow thinks her baby's the blackest.

Yea, the ice cream was great. Kristine, one of the twins, made some brownies and we had brownies and ice cream. The ice cream was legal, the brownies were not. But hay it was Mother's Day. I deserved a little cheat. It was so good it was unbelievable.
