Smile Impromptu Strawberry-Rhubarb Crisp

In another thread, someone had mentioned mixing cooked rhubarb with strawberry jellow.

Last night, inspired, I whipped up a batch of strawberry jello (using the Barb/Charski recipe in our recipe database) and put it in the fridge to chill. While it was in there, I chopped up a couple of rhubarb stalks and cooked them in the microwave (no liquid, pyrex bowl with a dish on top) for a couple of minutes, till soft. I chilled these, too. Then I made up a bit of whipped cream, and put that away as well.

Later, when the jello was starting to set, I stirred in the rhubarb. This morning, I decided on a little dessert after breakfast. Hey, why not?

I spooned out some of my strawberry/rhubarb jellow and, in a moment of cosmic consiousness, got out my tin of granola - the "sorta granola" recipe in the database - and sprinkled on a couple of spoons worth of that before adding my glob of whipped cream. It was GOOD!

And since I make the jello and granola with liquid splenda these days, was only a couple of carbs.

My mouth is watering! And if I made that, I'd get it ALL TO MYSELF since DH hates rhubarb! 'Course I could be nice and make it with blueberries instead I guess....

I always have your granola around, and was going to make a batch of that jello today...now, all I need is rhubarb. I have a project!!
