| OK....I'm gonna make a confession here....shhhhh, don't tell.....I just recently started eating steamed broccoli. I like it steamed with just butter, s&p, and also with cheese on top. Just curious about what types of cheeses everyone uses, and perhaps if anyone has a method for a creamier type of cheese sauce without using the processed stuff? Whewwwww.....it feels good to come out of the veggie *dark side*....LOL Shelley

| I cook the broccoli for about two minutes in the microwave and then melt some cream cheese and butter with it. It's really good with cut up chicken this way, too. When I make cheese sauce I usually just saute some minced onions or shallots in butter, add some cream and grated cheese, and cook at a low heat until thickened slightly. |

| I've experimented with several different cheese sauces. The one I like the best is a sauce that I just sorta throw together. I also use this same sauce for my Dreamfield mac and cheese. You can also boil some onions, celery, hot peppers and cilantro in a small amount of water until they are soft and add them to this sauce, along with the water after it has boiled way down, and it makes a wonderful Chili Con Queso. I take about a 1/2 pound(4g) chunk of American cheese (the block kind, the real thing not cheese food), cut it into chunks, and about 2 T.(0)of butter and put it in a 4 cup glass measuring cup. I pour about 1/2 to 3/4 cup(6g) of heavy cream over it and heat it on high in the microwave until the cheese is melted into the cream. Then add 2 good hand-fulls I'm guessing 2 cups(3g) of grated cheddar cheese and about 1/3 to 1/2 cup(5g) of sour cream and stir. The acid in the sour cream will cause the cheddar cheese to smooth out and it will also cause the cream to thicken so you won't need any additional thickener. I've never tried it with just cheddar cheese, it might be worth a try. 18g carbs for the whole thing Makes about 8 to 10 servings as a vegie topping. 2.25 to 1.8 carbs per serving Last edited by BettyR; 05-29-2004 at 07:22 PM. | I simply melt a couple american cheese slices over it, the kids like it best. Of course a homemade cheddar cheese sauce is the ultimate but must do what the kids will ingest easiest. LOL Renee |

| I have done the simple too Renee. yum.. May have to try the cream cheese tho Terrasant. Sounds delish.. Been considering trying my Dreamfields -- will try your recipe for that Betty. Thanks for all the good info..
