Hello, all!

As a new convert to Atkins, as well as someone who is on her first day of Induction, I have been exploring a couple of different sites. I am a member of eDiets and will be using some of the stuff on there to support my "by the book" Atkins journey (they seem a bit too liberal for me, at least in the beginning, where non-whole foods LC foods are concerned). I also have been exploring the actual Atkins site and using it for its journaling feature. I looked at some of the recipes on there and found some that looked good, and I was wondering if anyone had any experience with using the recipes on there. I know that sometimes I have heard that the Atkins WOE of the present is getting farther and farther from what Dr. Atkins recommended in his books. Is this in reference to the stuff on the Atkins web site? I am not usually an adventurous cook, but I would like to work on that more so that I can enjoy variety in the food I eat on this WOE (tend to get into a chicken or eggs rut otherwise, which often leads me down the dark road of cheating).

The only advice I would give, is to steer clear of anything that calls for Atkins Bake Mix. That stuff is gross, with a strong soy aftertaste.

All of George Stella's recipes that I've tried so far have been wonderful. He sticks a lot more to the original idea of eating real food.

The waffle buns are really good, I bought a $10.00 waffle iron at Walmart to just to make these buns. I love them with hamburgers.

And when you get off induction you've got to try these:

Almond Thins

1 cup almond flour
1 packet of Splenda
1 egg white
pinch of salt, garlic powder, & onion powder

Preheat oven 325. Mix ingredients well. Place mixture onto a well greased piece of tin foil. Spray a piece of wax paper with cooking spray and lay over top of mixture. Use a rolling pin to roll out to a cracker thickness. Gently remove wax paper. Sprinkle more salt on top if desired and press lightly into dough. Score with knife or pizza cutter into squares. Lay tin foil on rack in oven. Bake until golden brown about 10 minutes. Makes around 50 crackers.

Carb count is about 11 for the whole batch. You can also vary the flavor-use ranch powder, ground bacon bits, season salt...

You can have these now:

Garlic Toast

Open a package of string cheese, put a teaspoon of oil in a non-stick skillet and turn it on low heat.

Take your string cheese and put it in the oil and let it begin to melt, do not touch it. When it is almost melted sprinkle it with a pinch of garlic powder.

By the time the top is melted the bottom will be browned and crunchy. Remove it from pan and cool enough to handle. Eat it warm, you'll never miss garlic bread with you're Italian food again.

Less than 1 carb each

I've done well with the Atkins meal plan for about 18 months, yet I cannot recommend the Atkins recipes. I bought Atkins' cookbook and I seriously doubt the recipes were ever kitchen tested or taste tested.

Dana Carpenter's low carb cookbook is quite good and you can find lots of great recipes online. I've really liked some of the recipes I found on this website; particularly Marcie's Cauli Mash and the 3-minute chocolate cake.

I have been on Atkins since Labor Day. I have lost about 30 pounds. I have steered away from the Atkins recipes. I have several low-carb cookbooks. My favorites are - Extreme Lo-Carb Cuisine, 500 Low-Carb Recipes and The Low-Carb Comfort Food Cookbook. The best recipes I have found have been on this website. Also, www.lowcarbluxury & www.headed-west.com. I experiment with the recipes I see and go from there. Most are great just the way they are.

I have had pretty bad luck with Atkins Recipes. I tried to make a cake called "Chocolate Decadence" from there for Dear Partner's BDay and it was absolutely horrible.

The best recipes I have found are right on here in the Recipes section!

Regarding the Atkins Bake Mix --
The new formulation, called Quick Quisine Bake Mix is no longer soy, but vital wheat gluten. No soy taste. But I prefer Bob's Red Mill low carb baking mix -- lots of flax seed meal and delicious.

I think the recipes are, in general, good. However, they all call for Atkins products, and I don't really like some of those. I have substituted other things, like DaVinci syrups and my own bake mix, and have had better results.
If you use the recipes as a guide, and tweak them, they can be a good starting point, IMHO.
