I would like to make a low carb dessert for our family get together. I was thinking an unbaked cheesecake with strawberries and blueberries in a flag pattern on top. Anyone have a particular recipe to suggest for the filling part?

you also could check on on foodnetwork.com and look up low carb cheesecake... you will find an unbaked cheese cake..

I think another one that George Stella does sounds really good too - you whip heavy cream with sweetener, then stir in some ricotta cheese - you can either freeze it, or just layer it like a parfait - I'm thinking that layered in tall clear goblets with blueberries and either sliced strawberries or red raspberries it would be gorgeous AND very very tasty!


I got that recipe on the Food Network site too, under the Low Carb headings.
