Default Grilled Parmesan-Crusted Lemony Chicken

I usually make this on the stove top, but it was such a nice day, and it was much easier and lower-maintenance on the grill. Not to mention...no mess!! :cook:

These turned out SO juicy and flavorful, much more so than when I have made this stove--top

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Ingredients:
6 boneless/skinless chicken thighs
enough grated parmesan cheese (canned stuff) to coat chicken thighs
2 eggs
1 TB heavy cream
1TB mixed italian seasonings
1tsp garlic powder
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Pre-heat gas or charcol grill to med/high heat

Beat 2 eggs in shallow bowl, combine with heavy cream
Mix italian seasonings and garlic powder with parmesan cheese

Dip chicken thighs in egg mixture, coating well -- then coat well with parmesan mixture

Line grill grates with foil, spray foil liberally with Lemon flavor Pam or something similar (of course you can change the flavors) *make sure you do this right before cooking chicken, or pan spray and foil will get burned and yucky*

Grill on medium heat, turning only once, until juices run clear or internal temp of 180F (you may remove from heat below internal temp of 180F, chicken will continue to cook well after removed from heat)

*to prevent sticking, before turning chicken over, spray chicken thighs liberally with Lemon Pam,*

Serve with LC veggies and sides of your choice

I did not do a carb count on this recipe, as all ingredients have a minimal carb count. I would consider this to be induction legal.

Thanks Tara - sounds really good! Thighs are my favorite part of the chicken, hands down.
