Splenda in packs vs. loose

"Low Carb Cooking" at Low Carb Diet Support: "Can anyone tell me if I could use splenda loose for the packages? What is the exchange? I have a receipe that I would like to change....."

Fran,

I would urge you to avoid the Splenda granular (loose). It is full of maltodextrin which causes blood sugar spikes for most folks. The packets have it too, but in a much smaller amount that is more easily processed by our bodies when part of a recipe. I don't recommend straight Splenda at all unless it is liquid.

However, packets are equal to 2 teaspoons of sugar sweetness equivalent. Pourable is the same as sugar cup for cup.

1 packet of splenda is approx equivalent to 2 tsps of granular or loose splenda.
1 packet = 1 carb
2 T or 1/8 C. loose or granular = 3 carbs.

A Splenda spokesperson sent me this info showing calories/carbs for Splenda Granular vs Splenda in packets:

Splenda Granular
1 tsp = 0.5 gm carb = 2 calories
one half cup = 12 gm carb = 48 calories
1 cup = 24 gm carb = 96 calories

*1tsp = 1 serving

Packet of Splenda
1 packet = .9 gm of carb = 4 calories

0 grams of fat, 0 mg. of sodium, and 0 grams of protein per packet.
*1 packet has the sweetness of 2 tsp of sugar

Note: Per U.S. labeling laws, anything with less than 5 calories per serving, is properly labeled as "zero" or no-calorie.

The caloric and carbohydrate content for sugar is as follows:

Sugar
1 tsp = 4 gm of carb= 16 calories
one half cup = 96 gm of carb= 385 calories
1 cup = 192 gm of carb = 770 calories
Also, here are some cooking tips she sent:

Unfortunately, we do not suggest making candy, fudge, fudge brownies, meringue or any high sugar content foods. Sugar is responsible for the structure of these products and if you remove the sugar there is no structure. SPLENDA (R) No Calorie Sweetener also does not brown or carmelize, so it cannot be used like sugar to achieve caramel color or flavor and does not melt for candying.

SPLENDA, though made from sugar, does not act like sugar in all situations. In many recipes SPLENDA can replace sugar completely. However, some recipes, especially baked goods and desserts, may require structure and bulk that cannot be provided by SPLENDA alone. For this reason, some of our recipes are adjusted to compensate for the loss of structure. They may also contain sugar-containing ingredients (eg. molasses, honey, chocolate syrup, etc.) that also contribute important flavor elements and improve texture.

Recipes baked with SPLENDA will bake faster than those made with sugar. This is because sugar adds moisture to a recipe and increases the baking time. When you take out the sugar and moisture, recipes bake in less time. In addition, sugar makes a product brown and without it the baked food will not brown and you may not realize that the baked good is done, over baking it.

Thanks to all of you for the information. I had just seen Lo Carb and Loving it and they used a great deal of Splenda in their baked goods. Does Stevia Plus work the same way?

SteviaPlus acts similarly to the packets as it is the same "sweetness equivalent" as the packets. It has a glycemic index rating of 0 as opposed to Splenda which is roughly 80.

Is that what you needed to know?

Some people - not all - find stevia has a bitter taste. If you haven't used it before, do a taste test before adding it to your recipe.

Thanks for all the help. I have used Stevia plus with splenda before. It did not taste bad to me but I have not used it by itself.

If we should stay away from loose Splenda, what do you suggest for my morning coffee? I think everytime I make a cup about how many carbs are in it between the Splenda & the creamer.

Renee,
I finally broke down and ordered liquid splenda. It has NO carbs, so now I can have my 12 oz of coffee for only 2 carbs(coffee alone does have carbs). I used to use 2 pkts of sweetner, no cream, and my morning java fix was costing me 4 carbs! I cut that in half using the liquid splenda. Otherwise, try a mix of steviaPlus and splenda packets; both sweetners together taste very good and has no after taste, IMO.

I often use Fiberfit or Zero Carb Syrup Base to sweeten my coffee. They are both diluted forms of liquid sucralose. Both are expensive, but a bottle lasts a long time as you only need to use a few drops.

There was another lady selling an even more concentrated version because Trisha was shut down but, she appears to be open again.

Problem is, for how long. McNeil keeps hassling everyone about selling the concentrate because they don't want anyone to sell it here in the US. Go figure. They have a huge market that WANTS to buy it and they won't "let" us - crazy....

She says her lead time is a minimum of 2-3 weeks so you won't get it fast. I'm guessing she has to do some "juggling" in order to make this happen.

I ordered 4 bottles last time because I was afraid it would disappear. I almost NEVER use powder splenda at all anymore. It's either this concentrate or Torani flavored syrup.

I just went and ordered 6 more bottles! I'm so afraid of this fading away. I really don't like using the packets or pourable.

The other place to buy it is sweetzfree.com - theirs is more concentrated than from locarber.com - I've never tried Sweetzfree but I keep the locarber syrup on hand - whenever Trish is selling it I buy 3-4 bottles. They last ages.

I also tried FiberFit which I think I got at Netrition.com - it's good too but much more dilute. I prefer the 0 carb syrup concentrate from Trish to the FiberFit.

JMHO!

April, the conversions are on the bottles and I think on the website too - I forget the exact conversion right now, seems to me it was like a tablespoon of the locarber syrup was equal to a cup of sugar? Close to that anyway!
