| Wondering if anyone has some information on sprouted grain breads (and I also found tortillas)? I would be interested in your impressions of them and their place in a LC WOE, as well as your experience with using them. Thanks!

| I've never had sprouted grain tortillas, but while I followed Dr. Schwarzbein's diet, I did eat sprouted grain breads. If you are going to eat bread, it's probably the healthiest bread to eat. It might take a little getting used to, since it's SO dense, not light, like traditional bread. And most sprouted grain bread is made w/o preservatives, so you MUST keep it in the freezer, unless you are planning to eat the whole loaf in a couple days. It does freeze well, so that isn't a problem. The Ezekiel bread comes also w/o salt, and though it's probably healthier for you, it does take some getting used to. But when I followed Dr. Schwarzbein's diet, she didn't want you eating salt anyway, so it's all what you get used to. If you have a Trader Joe's near you, they usually sell Ezekiel bread, but they also carry their own brand of sprouted grain bread that is very good, and about $1 less per loaf, and if I remember, 1 or 2 carbs less, per slice, than Ezekiel bread. And the TJ's brand had several varieties, where the Ezekiel bread usually had 1 or 2 varieties. Regarding the use of these breads in LC eating: If you are following a traditional LC plan, like Atkins, it's probably not your best choice, because it's still about 13-15 carbs per slice. But if you are following Schwarzbein Principle, she recommends sprouted grain bread, Ezekiel by name, in her diet. Though, she doesn't really like her followers to choose processed carbs first. She likes her followers to choose a natural carb, like potato or fruit first. But she doesn't turn her nose up at Ezekiel bread. She does give other whole grain choices, like corn or whole wheat tortillas, Akmak crackers (available at TJ's also). But she doesn't tend to like grains a whole lot. Once you start eating sprouted grain bread, it's hard to go back to regular bread. The taste is very satisfying, especially toasted, with butter. I hope any of this information helped. Teri |
