Smile Beans!

Hi paleopals

I tried making some beans for the first time in years yesterday. I decided to do lentils since they are low GI. I soaked about 2.5 cups of lentils in a large bowl of filtered water for about an hour (technically, they don't need soaking, but I did because WAP says to do so...) and was amazed at how much YUCK came out of them!

I added 3 small carrots, the tops of my celery, an onion, an elephant garlic clove, 4 home-smoked ham hocks, a pinch of thyme, some lemon pepper and sea salt. I pre-cooked my veggies in a bit of fat for about 10 minutes then added everything in with enough water to cover. Cooked them for about an hour and a half. YUMMY

I didn't have any discernable insulin spike or anything. This will be a nice addition to my woe.

Alice, the hocks were actually quite simple to do. I just bought some raw ones at the market and seasoned them with some salt, I think. Then, after I was done cooking something on my BBQ (coals) I threw them on there until they were cooked through. After that, I just put them into a ziplock and froze them until I wanted to deal with them :great:

They didn't have the intensity of store-bought ones, but my family snarfed it down!!!

I'll put that on my list of ideas to try!

BTW, I'm glad your cookbooks give encouragement to use the BBQ. I seem to have a real problem cooking that way, so I need all the help I can get!

Oh, I forgot -- I threw fresh herbs on the coals for a more "smoked" flavor. I'm glad to be of service
