    Hi all,
    I just made some homemade mayo and it has a very bitter taste to it, I suspect, from the olive oil (used 1 egg and 1 cup olive oil). Anyone have any suggestions on how to alliviate the bitterness? I tried fresh squeezed orange and lime juice but it doesn't seem to help.

    Also, I'm seeing a lot of discussion about vinegar but I thought this wasn't allowed on Paleo diets. I can't find an explanation in either of the books (Neandrathin and Paleo Diet) about the reasoning behind vinegar being off limits (because it is fermented, hence processed?)

    I'm not too familiar with the cave type diets, but I know a few things about olive oil.

    For mayonnaise, I'd choose an Extra Light olive oil. You don't really want the olive taste to overpower. If I couldn't use vinegar, I would use lemon juice. If you like garlic, you can make aioli, which is a garlic flavored mayo, by adding some fresh garlic to the egg as you're blending it. Make sure it's nice and pulverized before you start adding the oil, a bit at a time.

    yea, you want to use light oil. I have a mayo recipe in my books, or the Trader Joes mayo is excellent (yellow label -- just like my recipe) or the "blender mayonnaise" recipe from the Joy of Cooking is great. I don't think I'd like orange in my mayo, though lime does work.

    i don't do either of the paleo plans you are referring to -- i throw a bit of www.westonaprice.com (WAP) into my mix. i'm a cross between the zone, CAD and WAP. WAP definitely allows vinegar. You might look into that link, it has literally days worth of reading there.

    I don't buy into everything they say, but the section on oils and the article "nasty brutish short" are definitely worth the read.

    Thank you for the replies. I solved the problem basically by making another batch with canola oil. I know there's some contraversy about there being trans fats when it's cooked on high heats (at least that's what I've heard - don't know if it's true), I figure since it's not being heated it should be fine. I did use extra virgin olive oil (don't know if that's the same as extra light, though) but it didn't help!

    Tam, extra virgin is the exact opposite of extra light. Extra virgin has the most olive flavor. I would imagine it was pretty overpowering in a mayo. Extra light has very little flavor. It has so little olive flavor that I even use it as a shortening in some baked goods.

    The canola seems like a good idea in this context.
