Tofu Chocolate Cake...Any Recipes w/o Cream cheese

Wink Tofu Chocolate Cake...Any Recipes w/o Cream cheese

Hello Low Carb Friends,
I need help. Does anyone have a good recipe for Tofu Chocolate cake or any low-carb choc. cake?
I need to make a birthday cake (nothing too fancy, simple is good) which:
1. Does not contain Cream cheese or any cheeses.
2. Does not contain butter (I have a substitute for that)
3. Does not contain milk (I use soy milk, rice milk, or water)
4. Does not contain any animal products at all (which probably covers it all) LOL

Any help would be greatly appreciated. We do not eat icing, so just a plain chocolate cake is fine. And yes, I have a substitute for the topping also.

In the recipes section there is a cake called 3 Minute Choc. Cake. It is delicious and meets your criteria except for the butter. But depending on what you substitue for it, it might work.

i know the minicarb choc. cake mix sometimes gets a bad rap because of the dryness and grainy texture. i have to say though, that with some minor modifications, it really turns out great. the directions call for oil, cream, and water. i leave out the water and up the oil and cream to 1/2 cup each, i'm sure you could use soy milk instead of the cream. the key is to then add 1/2 cup sour cream and some extra cocoa powder and splenda. i'll be willing to bet that blended up silken tofu would work almost the same as the sour cream. mine comes out moist and fudgy almost like a brownie. it would be worth a try especially since the cake mix was 1$/box at walmart and big lots.

There's a really easy tofu chocolate pie we used to make:

1. Melt a bag of chocolate chips.
2. Scrape into blender and add a block of tofu (the tetra-pak kind works better than the floating-in-water kind) and a splash of vanilla.
3. Blend until smooth.
4. Pour into pie crust and refrigerate until set.

You can use MiniCarb chips, and any nut crust recipe that doesn't involve butter.

This recipe sounds really easy. How do I make a nut crust? What is tetra-pak? Who has mini-carb chips? and Wouldn't this be a pie instead of a cake since I would use pie crust?
Please let me know. It still sounds yummy.:cook:

Ok, here's your fish:
You make nut crusts by processing nuts until they're a fine meal, and normally adding sweetener and some butter. Like I said, you'll have to find a nut crust recipe that doesn't use butter. Tetra-pak is the foil package that shelf-stable tofu comes in, as opposed to the kind that floats in water. Netrition has the MiniCarb chips, and yes, it's a pie.

Here is a base recipe that I made for a Chocolate Cake and my modifications to make it into a Devils Food Cake. I tinkered with the recipe because I wanted more of a chocolate flavor. The base cake is a moist, dark cake. With my changes, It is a moist, dark cake that tastes like an oreo cookie. I think you might be able to substitute silken tofu for the cream cheese.

1 15 oz can Eden Farms Black Soy Beans (drained and rinsed well)
4 eggs
4 oz cream cheese
1 tsp baking soda
1 cup Splenda
1/3 cup Diabetisweet
3 Tbls unsweetened cocoa
2 Tbls vanilla

Preheat oven to 350 degrees. Spray 9" cake pan with pan spray, line bottom with parchment paper and spray lightly. Put all ingredients in a food processor and process until smooth. Pour into prepared pan and bake for 30-40 minutes, until a toothpick comes out clean. (I have made this cake twice and the baking time is longer in my oven, about 50 minutes.) Cool in pan for 15 minutes, loosen sides and invert onto cake rack to cool thoroughly. The recipe stated that you can use any combination of granular sweeteners to total 1 and 1/3 cups.

For my Devil's Food cake cake I used 1 cup of Maltitol and liquid Splenda equal to 1/2 cup. To make up for the loss of volume, I added 1/3 cup of oat fiber. I used 4 Tbls, 2 each, of a mix of cocoas. The 2 cocoas are from Jena-Maries.com. they are Jet Black Cocoa and High Fat Dutched Cocoa. The next time I make the cake I think that I will use only the liquid Splenda and increase the oat fiber to 1 cup. By the way, my observation is that the oat fiber addition I made this time gave the cake a better texture.

Thats why I suggested that you might be able to substitute silken tofu for the cream cheese.
