A New South Beach Breakfast

Ok...since I have done LC since Jan. of this year, doing a "strict" phase again like phase 1 of SBD kind of has me sick of eggs already(again)..LOL
This morning, I thought about a mock danish, but knew I couldn't have the full fat cream cheese. Soooooooo, I substituted part skim ricotta and came up with a pretty tasty breakfast souffle type thingie.
Lets call it a SBD Breakfast souffle.

1/2 C. part skim ricotta cheese
1 egg, well beaten
1 pkt splenda
1 pkt stevia plus
heaping dash of cinnamon
1 tsp of vanilla

Mix ricotta into the egg, blending well. Add sweetners and cinnamon and vanilla. Pour into a 6 oz ramiken sprayed with butter flavor Pam.
Cover with wax paper and microwave about 3 minutes on 60% power; rotate dish a quarter turn and microwave another 2-3 minutes on 80% power(times may vary). Invert onto plate and top with a little butter and your favorite sf Davinci syrup...(french vanilla was yummy)
I plan on having this or a variation there of, maybe every 3 or 4 days to break the monotony
of eggs every morning, as I am not overly fond of the meal plans in phase 1.

Well, good news here, I think...
I had this souffle thingie for breakfast, and also had my ricotta cream for dessert,that same night and I still had a half pound loss this am...whew....
It still might be one of those YMMV things...do the ricotta for breakfast, may need to do sf jello for after dinner. I will definitely be monitoring myself pretty closely to see if I can handle the ricotta twice in one day every once in a while.

Oh My!! Thank you so much for the great idea for breakfast. I am going to try this in the morning. I can not wait to give it a taste. I am like you with eggs, but I do eat a lot of veggies for breakfast. CONGRATS TO YOU ON YOUR LOSS!!!! Best of luck to you!

Hi Kim,
I am thinking of trying some fat free cream cheese and egg beaters to make a mock danish, SBD style. The ricotta one is not as good as the original Mock Danish with the full fat cream cheese, but at least it's something different and I didn't think it was TO bad...LOL
How's it going for you?
