| Is there a simple process to making kefir cheese- I read Dom's site but it seems sooooooooo involved. Thanks for any info Rita |

| Sure there is. Go for a "fresh" cheese. Line a strainer with a coffee filter, or cheesecloth. Pour your finished kefir into it. Put a lose lid on (just to keep out dust or whatever) and let it sit. The longer you let it sit, the "drier" the product. It goes from a product that, if whipped, is a lot like yogurt, to a more "cottage cheesy" thing, to something comparable to a nice dry ricotta. At any point, put it into a container and mix with fruit, sugar free syrup, or herbs with a little garlic & onion powder. Very yummy.

| Thanks Maggie, today is the second day of "sitting" :O yesterday I just added a little lemon pepper to it and put it on celery- it was really good. Rita |
