| my mom used to chill evaporated milk, then whip it and use it in the same way I use heavy whipping cream.. my question... can fat free evaporated milk be whipped and used the same way, like when a recipe (like the sugar free peanut butter pie recipe I posted) calls for whipped, whipping cream????

| LouG-- Good question. I never tried to whipped evap milk before. Apparently, evap milk is hard to whip. This is what I found at: http://www.foodsubs.com/Dairyoth.html Another site says evap milk has to be very cold in order to whip it at: http://www.nestle.com/Interest_Areas...gold+Jelly.htm I found a recipe (has 8g carbs) for whipped cream using evap milk at: http://www.baking911.com/recipes/whipcream/lowfat.htm I'm guessing that you can either chill the evap milk and whip it into a cream OR you can use the recipe which may be easier. *shrug* Good luck with this and PLEASE tell me how it works out. | Here's what I found out. Perhaps it will help: 1 can evaporated milk = 10 ounces 78 calories per can (10 ounces) 11.3 carbs per can (10 ounces) 10 ounces of heavy cream 580 calories (for 10 ounces) 10 carbs (for 10 ounces) You can whip evaporated milk in place of heavy whipping cream, but it needs to be partially frozen first. I can see the advantage of using evaporated milk for whipping over that of heavy cream in that the caloric content is far less. I'm glad you asked this question.

| and I found out that Hoods carb countdown DOES make heavy whipping cream, but its only available in New England! Not fair, not fair.

| Okay guys... The other night I followed the recipe for the creme brulee, and I used regular heavy cream. The container said that there were no carbs. Tons of fat, but no carbs. Is this what you guys are referring to as "heavy whipping cream". I stalled but I thought it was because I indulged in a little more fat than usual, and I ate kind of late... What is going on? How can the label read 0, when there could be as many as ten? Help! |

| Geni Pha, Cute name BTW! It can say that because if one serving is less than .5 grams they can list it as a big fat 0 so a serving should be considered as 1/2 a gram of carbs so when you use a bunch you can get a true count like four servings would be 2 grams etc. HTH!

| OK, I see a problem here. I have been eating whipped whipping cream homeade, with hand mixer) by the tablesoons full. I mix softned cream cheese with sugar free jello (0 carbs) let it chill, and put the whipped cream on top of it. I eat it everyday and it makes me very very happy. However, I don't think I'm loosing much weight, think I have to give it up? Have it in moderation? I thought since "heavy" wipping cream says it has 1 carb it would be OK. I'm gonna hate to give it up :( What kind of dessert would be better? B |

| I have been using evaported milk in my cooking and baking instead of the heavy whipping cream..... can't tell the difference and much less in calorie content as discussed above. |

| Boditty, both the cream and cream cheese can/will cause some to stall. While those foods are lower carb items, they are calorie dense. Try taking the cream cheese out of the jello and using a small dollop of the whipped cream. See where that takes you. Good luck! |
