Are you in the Induction Phase of Atkins' plan? If so, why are you eating peanuts? Rule #3 states that you shouldn't eat nuts.

Have you read the book? Scour the acceptable foods list for foods that you can eat during Induction. Modify that list to fit your vegetarian needs. Keep in mind that you don't have to have "breakfast foods" for breakfast. I've had salad for breakfast before, or leftover dinner for breakfast. It's just food.

In lieu of reading the book, you can surf the Atkins Site for vegetarian recipes, such as this one.

But I suggest you read the book, if you haven't already done so. Also, right here on this site, there's a discussion about vegetarian/low carb dieting in the Reduced Carb forum. And you can search for sites such as this one to help with your vegetarian low carb needs.

Hope this helps...
