........in fact, many of the recipes for my new book that call for cream cheese, I actually used kefir cheese!

That is good to know - much easier for me to make kefir cheese than find cream cream cheese where we live.

Hey Sharron - how much kefir cheese do you use (cup measure) to substitute for the 8 oz package of cream cheese?
