Kefir carb count

I think I read that you can count fewer carbs with kefir milk because the micro-organisms eat the lactose, making the ECC less. True or false? How should I count them?

I got kefir grains from Barb K (THANKS!) and had my first kefir smoothies this weekend. I think I'm in LOVE.

I believe the general agreement is 4 carbs per cup. Most of us seem to notice less of a blood sugar effect with kefir than with yogurt.

We just love those smoothies at our house too!

Yes, my own experience is that I get a very modest response, blood glucose wise, to kefir. .. and a slower rise, so the glycemic response must be fairly low - probably due to the fat in the whole milk. Not true for yogurt, which acts just like whole milk on me.

I count it at 6 per cup, which is about half of whole milk, but I think that's being very conservative. But I NEED to be conservative. I really love this stuff - straight from the fridge - and I have never liked milk.

I imagine anything between 4-8 would be in the ball-park.

Thanks ladies. If I had to count the entire amount, it would be a little hard to enjoy one everyday and I feel I need to do that right now since I suspect candida.

Hey Jana, sorry I didn't see this post sooner!!!! So you are lovin' those cute little buggars, eh? Me too. In fact I am sipping on a s/f syrup only smoothie right now. mmmmmmmm I LOVE them!!!!!! I found that the smoothies with the frozen strawberries/blueberries were stalling me, so I am only doing s/f syrups in them right now, with stevia. They taste just as good as with the fruit. YUMMMMMMMMERS!!!!!

Oh and yeah, I think I've heard 4 carbs per cup (without the fruit)
