Ehhh. Well, it brewed into something that's not quite kefir.

Yesterday I started a test of 1 cup carb countdown, 1/2 cup milk (so my babies wouldn't starve in case it didn't work) and a big clump of grains from my main batch.

As of this evening, I had complete separation. I strained it and it was very thick, nice texture, but sort of tasteless. Not quite sweet, but not sour either. Just sort of bland. I presume that the little buggers can't eat splenda, since it's not real food, so that never got turned into anything at all. Probably still splenda.

I guess if you want that good lactic acid, you gotta start with lactose.

Not sour, not right, not kefir.

Gave those babies a big drink of real milk.

I tought I heard them say "thank you ... you stupid human." as I poured the real thing into their house.

(Brutus didn't mind it, so he can have some more in the AM. )

Oh Maggie! I think I've heard that more than once from mine without using the low-carb milk! Thanks for sharing your results.

Well, now we know Maggie. It was an interesting experiment, anyway.

While yours are starving, and Sharron's are living on the fat of the land, mine are taking a winter vacation in the fridge until I use up some excess.
