Oh wow! I never thought I would actually have someone to send grains to!!!

Savina - we live in Sumatra and I'm not too familiar with mail from here but it shouldn't be a problem getting the grains to you. The ones I have are dried and I will send them along with the info to get you started using them.

Wink How long does Kefir keep?

Hi everyone! My kefir is doing well. I have made over a gallon now, and the grains are starting to get larger. My question is, how long does kefir keep? I got carried away and I have almost 1 1/2 gallons, was not thinking about how well it keeps. Can you give me an idea? I had probably better start making some muffins and stuff and using kefir in them instead of milk to use some of this up, huh I really like it though, not sorry I started! Hi Tiedye.

Kefir seems to keep a VERY VERY long time, but it does change some while it's being stored. IMHO, it just gets better and better. Seems to get more tart every day in my fridge.

However, you can make some really delicious cheese from it, if you line a colander with a couple of layers of cheese cloth, let your gallon sit for a while at room temp until you get some serious separation, and then pour it gently into the lined colander and put a dish over the top (to keep dust, etc, out) and let it sit for several hours. Then gather up the edges of the cheesecloth, tie (or rubber band) them together and hang the whole business up over a pot until it stops dripping, a day or so. Then use it in cooking where you might use cottage cheese or ricotta, or take some and whisk in some flavored syrup to make a nice yogurt substitute, or mix in some herbs and spread it on raw veggies or some kind of lc cracker like Rye Vita or something.

Thank you so much Maggie, the cheese sounds fantastic!! I am also glad to know the kefir keeps well. I have been giving my dog about a tablespoon morning and evening. He loves it so much! I had a bowl on the counter today with just about a cup in it. I heard a crash, and YEP, he had managed to knock it to the floor and was lapping it up fast! Thank you, Joan

i'm so excited to be getting grains from barb! i broke down & bought some kefir from the store yesterday (i know, not the same thing), but i wanted to try it-- i've never had it before.
it's delicious! tastes like watery yogurt. i put a little sf raspberry syrup in it & it was delicious! i can hardly wait to get my grains & get going.

Cinelu, I missed your post. It's a little late, but my experiments with the carb countdown were no good. I think there's just not enough in that frankenfood for the little buggers to nosh on.
