| Hi everyone!! I am so glad the weekend is over. We had an open house yesterday, so i cleaned all weekend!! I hate having open houses--such a pain, especially with little ones in the house. Hopefully someone will fall in love with this house and want to make it theirs, until then i guess its lots of cleaning for me!! Hope everyones weekend went well, kinda rainy here so didn't really get to enjoy the outdoors much. I did make a batch of beef jerky and it turned out pretty good. Next time i think i need to marinate it though. I just used a dry rub on it this time. Someone here said to use Sherrie's recipe i believe--where do i find this?? I have come to realize i feel much better since i have eliminated the dairy, like milk and cheese. I guess i didn't think i had a problem with it, i guess you never know till you eliminate it and then see how you feel, and of course i LOVE cheese (maybe that was half my problem). | Hi, Believer, Sharron's recipe is in her cookbook - Extreme Lo-Carb Cuisine, by Sharron Long. If you don't have her cookbook, you can try contacting her. She may not be able to email the recipe to you because of copyright concerns - I'm not sure about that. She hangs out in various places around here, including the cooking forum, but she's on vacation this week. I love Sharron's recipe - it is very caveman friendly. I follow it to the letter with one exception - I don't use the bit of sweetener she includes (Stevia plus). The jerky has a great flavor. My kids love it. Another lowcarb cookbook I have has a couple of jerky recipes - Truly Low Carb, volume 1, by Karen Ryvasy. I haven't tried these, but they need more modification to be paleo. I'm starting a new batch today. I hope to make it into pemmican. I had the butcher slice it for me with his meat-slicing machine. It will be so much easier - I'm sure a lazy cave woman LOL. Good luck with selling your house. We've been in the same house over 20 years and we're all pack rats - I can't imagine the amount of work we'd have to do to sell. I am another one who feels much better without dairy. I never suspected it as a problem food until I first started lc. I had previously been a skim milk junkie, drinking a half gallon a day. I completely eliminated the skim milk, and I wasn't doing cream and cheese at all at the beginning. The difference was like night and day. I felt so WONDERFUL eating the new way. It was like one of those life-changing "mountain-top" experiences. My dh has lots of problems with allergies, stomach pain, insomnia, headaches, and plain feeling yucky. His diet is based on wheat, milk, and sugar. I wish he would try paleo, but he's not very motivated. He can't imagine what he would eat without those three, and he's naturally thin with low blood pressure and not-too-bad cholesterol so he feels like he should be able to eat whatever he wants. He doesn't really believe that his food choices could be linked to his allergies and so on. Oh, well. It's nice and sunny here, although cool. I hope to get out for a nice walk this afternoon.
