| this is what I made last night ( and it will last me 2 more nights with salad, too). It was a total invention but kind of like a lasagne. Made up a sauce with the following ingredients: Fried 1 whole chopped red bell pepper, added in 2 quorn fillets ( meat substitute, LC and similar in size to 2 chicken fillets), chopped them into strips. Added 1 large chopped mushroom, squeeze of lemon,2 cloves crushed garlic, s&p, capful of vinegar ( to make it a bit salsa-like), dried mixed herbs and let it simmer cook a bit. Then added 1 tin plum tomatoes and left to simmer for a bit. Made 6 pancakes to recipe from Atkins book - edition b4 last- ( i think) 3 eggs, 1/4 tsp salt, 1 1/2 oz soya flour, and 100ml water ( bit edgy on the flour/water amounts, but its in the book) Layered up the sauce and pancakes , after 5th pancake put in a layer of grated cheddar, put on last bit of sauce and final pancake. Made a cheese sauce from lrg tbsp double cream, handful of grated cheddr and a drop of water. Poured it over the top and stuck it in oven for about 1/2 hour. Cut a fat wedge of it and had it with salad YUM YUM !!! Try it, it's gorge. You could substitute the quorn for soya/ tofu or add in other mediterranean vegies like courgette or artichokes ar eggplant...or spinach ..... |

| Sounds good! I've used the quorn nuggets (before LC) and have some of the strips or pieces in my freezer. It's made from mushroom protein or some such thing. Anyway, I'll give this a try. Thanks!
