Yes I would also like to thank the webmaster for making a vegetarian.

Always irks me when a low carb bulletin board does not have one.


So trude are you vegetarian? What kinds of things do you like to eat? have you had any troubles/problems with this way of eating??

no I can just see that vegetarian running around out there....
geting a bit stuck on the breakfast front, I'm used to the omelettes but have just ordered some lc waffles and syrup as a treat ( spent a fortune!) plus also i was given a breadmaker for my birthday so have ordered breadmix but I don't think the pack will go far- I bought the cheap one at £4 (probably around $8) - is it as expensive in the US? We have an Atkins restaurant in London but no low carb food here except on the internet...
I also eat soups and salads quite a bit, i adapted one from the Atkins book to make it totally vegie, but eating out's a bummer as I keep having to have the same food again and again and its always a bit disappointing. Apart from that it's been pretty easy doing it at home and I'm losing well. Thankfully I eat meat substitutes so I can do easy meals..

Hi Trude!!

I get stuck on the breakfast front also sometimes. I do make omelets, sometimes though I use atkins muffins, one with some cream cheese, which I know is probably hard for you to get. Deviled eggs are a good breakfast alternative and on weekends I make crepes using 2 eggs, 2 spoonfuls cream cheese, baking soda, and some sweetener, mix all good together. Cook in batches like thin pancakes in a buttered pan. Really good stuff.

Some dinner ideas I like are stuffed veggies of all types, curries, Indian food, we do the salad thing too, and sometimes a veggie burger with a vegetable side dish.

any good soup recipes? I love soup and need some new ideas.

I'm a veggie wannbe. I've gone veggie before and I love them. It has hurt to no end no having the quantity or abundance of fruits and veggies that I used to eat.

Sometimes I'd kill for a whole peach or a good apple without the guilt or going over my carb count.

Still I'd love to learn how to cook a spaghetti squash. I don't know the first thing about that type of squash. The only varieties of squash I ever ate were yellow crook-necks and green varieties. Had a bad experience with a butter nut squash once. Big time Yucky tasting no matter how much syrup I put on it.

Any recipes?

I've got one: boiled califlower (mashed to a pulp), add sour cream, fresh chives (or onions if you don't have chives), paprika, diced bell pepper and butter. Put all in a square pan, bake until everything gets good and toasty on top. Remove from oven. Sprinkle with sharp cheddar cheese and place under broiler until cheese gets melted and slightly brown.

This dish is so much like a twiced backed potato you would be amazed. You can also add soy burger bits for added protein. It's grand.

I hope the veggie section can continue. I'm dying for some fruits.

Hi writes4me! Just was talking about spaghetti squash in the other topic! Let me tell you how I cook it:

cut the spag. squash in half. Scoop out the seeds and stringy things. Place cut side down on a greased baking sheet and bake at 325 for 30-40 min until tender. Then shred the insides with a fork. Many different ways to eat it! I also have done this part the night before and just heated the shreds up the next day, makes it quick and easy!

your cauliflower recipe sounds yummy!!

one of my fave recipes of the moment is fresh grean beans sliced in half, boiled lightly and drained and flushed with cold water. then mixed with olive oil, red wine vinegar, blue cheese, some red onion, and toasted pecans!

If you want to save time, and energy, pierce the squash several times with a fork, and microwave for approx. 5 min. per pound. Let rest for an additional 5 mins, slice lengthwise, scoop out the middle, and do what you will with it.. (I make alfredo sauce with cream, parm cheese, cracked pepper, a bit of mozzerella, and garlic).

Hello !!

I just joined LCE and I'm so glad to find a vegetarian section. I am vegetarian myself and I find it really hard to follow the Atkins diet. So I'm following a LC veggie diet...

I wouldn't categorize myself any sort of vegetarian since I do eat some meat, but I do enjoy tofu and other protein and meat substitutes. I look forward to sharing ideas on what to do with the many interesting non-meat products......

This is the 1st veg LC site I've seen...I've been a veg. for 20 years...how do I do the LC thing...I've been eating eggs and tofu....20lbs off...20 to go...tough slog.. what's the secret??
