I use heavy cream in mine - sometimes instead I'll add a mixture of sour cream with ranch seasoning, along with a little cream cheese, and cheddar. I love cauliflower so this is a regular with our meals.

Thankyou...I had it at Zorns and it was really yummy. I bought a head of Cauliflower the other day and I was dying to make it.

Scott, just make sure after you cook it that you drain it REALLY well. It can be a little waterier (if that's a word) than real mashed potatoes. I couple ounces of BRIE in it is good too. I REALLY like it with cheddar melted in it.

I haven't made this for awhile, it's time..............

i have tried several recipies, and i reccomend marcie's as the best i've found, too! i would also say the food processer is a must-have, too...

I hate to admit it, but I gave away my food processor because I hated to clean the darn thing. But now it looks like I may need to break down and get another one. But that won't be for a few months because money is pretty darn tight these days.

Any other suggestions on how to make the "mashed" potato dish? I tried cutting up the cauliflower and using a hand potato masher...yes, my old 50's era collectible with the red handle...but it just didn't work out.

Melissa, I always hated cleaning my food processor as well. The best gift I ever received was one of those handheld immersion blenders( Braun, Black and Decker). It works great on the cauliflower and I can do it right in the cooking pot. Clean up is a snap.

I have one of those and it is WONDERFUL, easy to clean and used EVERYDAY!!!!

Does anyone have a quick carb count for the Caulimash????? I can figure it out, but if someone already has the numbers, I'd appreciate it. I need to post it for Brona' in her "Im New" thread.

I just got one of those blenders last week It was "gift for no reason" from my mom. I didn't realize that I'd be able to use it for cauliflower, too. The little blade is so...well...little. I'll have to give it a try. I absolutely love it for liquids!

Melissa, mine purees strawberries, blueberries, avocado............I LOVE it!!! It doesn't pulverize the seeds in the berries, but I can live with that. I even made PEANUT BUTTER with the chopping cup it comes with. DH likes it chunky, so I pureed a bunch of peanuts til they were pretty smooth, then I chopped some peanuts with a pulse action and added those. He LOVES it!!!!! I added a bit of lite olive oil to make the creamy part creamier. I also added a PINCH of salt.

It's really GOOD, but a pain in the you know what.............shelling peanuts, UCK. But doing that while watching a good tv show helps!!!
