| Anyone have a good recipe for these?! I have a whole head of cauliflower - and I was wanting to make these for tonight and have enough left over to eat off for awhile! |

| I can ditto Marcie's recipe! My husband loved it, and I did, too. Haven't tried any of the others. Afraid they just won't compare to the great taste of Marcie's recipe!

| Here's a good one. I make it just about every week. Stuffed fauxtato casserole 1 - 16 oz bag frozen cauliflower 1 - bunch green onions 1/4 cup - bacon bits 1 - 8 oz block cream cheese 4 oz - shredded cheese (I use sharp cheddar) Nuke cauliflower till tender, but not mushy. Add cauliflower and cream cheese to food processer (or mix with hand mixer) until cauliflower is in small bits. Stir in green onions, bacon bits, and shredded cheese. Transfer to baking dish; bake at 350F for 20-30 minutes. Yum. If I remember correctly, it comes to about 5-6g carbs per serving. You can reduce carbs by reducing amount of green onions, if you want.

| IMHO, I did not care for the frozen cauliflower "fauxtatoes". I wanted to like it! I really, really did. I am wondering if the consistency would be different with fresh cauliflower as opposed to the frozen. I think I will try Marcie's recipe next week. (keeping my fingers crossed!) Also keep in mind that I don't even like cauliflower, but LOVE mashed potatoes, so I am probably not a good judge.

| Hmm... I make fauxtatoes with both frozen and fresh cauliflower and I vastly prefer the frozen because I can get a much silkier texture with them, pretty much like the real thing. I let them thaw completely first and then microwave in a covered dish for 8 minutes (my micro is 700 watts). Next, I throw them in the food processor and process at a very high speed until they are well pulverized. I then add heavy cream and butter in small amounts and process again at high speed until they are the texture I want. Season with salt and pepper and they are done. My DH who is not a LCer loves these! He gets pretty excited when he see me making them. Marcie's recipe is fantastic and is the one that I use when I want to make an extra special dish. The rest of the time, I just make my basic recipe.

| Maybe it is because I used a handmixer as opposed to the processor! I bet that would account for the texture being more cabbage-ish than potato-ish.

| Crystalrp, yes that probably would account for the texture being different. I never owned a processor until I went LC and now I wonder how I ever got along without one. I need to get out my shredding blade and try the "rice."

| cauliflower makes a wonderfull fautato salad.. mmmm i also use it in some soups where potatos would go, it also makes a wonderfull fried riceaflower.. mmmm I realy dont get in to fau mash.. but i do make the ocasional loaded fau tato thing.. mm

| I'll have to try some of these recipes. I've yet to make fauxtatoes. Sounds great though. I was gonna make a low carb shepards pie the other night using fauxtatoes. I decided on something else though. I eat cauliflower at least 2 times a week. I love it. Raw, cooked, frozen, fresh, I don't care. lol yummy. |
