WEll I hope you all are ready because here it goes.
Breakfast 2 egg omelet with a little tomatoe and a little mozarella
3 pieces of bacon
snack pork rinds and 3 sweet pickles no added sugar made with AS
Lunch a little pot roast meat with 1/2 cup collards
stopped by target and bought husband popcorn and had a downslide had a couple of pieces( stopped before went over edge)
Dinner.. help not sure ... steak with 1/2 onion and can mushrooms sauteed. 1/4 cup collards. salad with lettuce,cucumber and a little mushroom with good seasons italian. Blue cheese dressing to dip my steak in.
lots of water
dessert.. sf jello with redi whip...
I did bring heavy cream to have with coffee(decaf) had two cups.
Exercise: went from third floor to fifth floor each floor has two flights of stairs.
I think I did pretty good. Would love to be in the halloween challenge but not sure I can make it. How does it work???

Maggie1, your menu looks pretty good to me other than the bit of popcorn and reddiwhip. But good for you for stopping before "going over the edge", LOL! That's an important choice you made - to stop.

I'd for sure skip the reddiwhip. Jjust whip up a bit of your heavy cream instead - you can sweeten it with a little Splenda, if you like. It's a way better choice than the pre-sweetened canned whip creams.

if you are out for the convience of redi whip there is a company out there that makes a caned whiped topping thing that is sweetend w/ splenda I'm not sure what company it is.. but i caught it when glanceing threw that area of the dairy section.

Isnt it odd when the change from a Low fat diet - to a Low carb diet... for instance.. the pop corn..- on a LF diet you could eat pop corn (w/out BUTTER..) now we can eat the butter and not popcorn LOL...

I will use Heavy whipping cream to make my own whiped cream... i have a mixer that has a wisk end for it.. that goes in just one slot.. and i just pour about 2-3 tbsp of heavy whipping cream in a coffee mug and start the mixer up.. zip it for about 30 seconds on highest setting till it just starts to get stiff.. and vloa.. its done.. realy dont take much time and i usualy always have a semi clean glass in sink (from drinking water) that i just fill up and zip the wisk in to rince off.. so it dont take much to clean it..

I have actualy been useing that for my coffee too.. when i have some.. i make almost like a capichino.. mmmmm but i gota avoid the coffee.. since i dont buy decaf.. it gives me some issues.. (shakes and other problems - since i havent had caffeine since January.
Good luck ... and good job on not going over board w/ the pop corn.

Ditto the Reddi-Whip. A few more things to check:

If still on induction, go easy on onions. I believe they are a higher-glycemic-index food. Also, the Good Seasons mix -- check it for sugar content. Ditto the Blue Cheese dressing you use as a dip. Some are OK. I have a bottle in the pantry that has 2 carbs per T. Waiting for hubby to use it up!

And that sugar-free jello. The Jello brand is made with Nutri-Sweet. Some people have issues with it (slower weight loss). Maybe you are one of the lucky ones. I saw a recipe once (can't recall where) to make your own jello: use plain knox gelatin mixed with Kool-Aid powder (the kind with NO sugar in it) and sweeten with Splenda. Also heard that the Jolly Rancher brand jello uses Splenda. I can't find that brand in KC.

Maggie:

I notice that your start date for the Atkins plan is June 27th, so I'm assuming that you are no longer following the Induction phase.

With that in mind, however, I would still take it easy with high glycemic foods such as tomatoes, onions, and popcorn.

And I would never use Reddi Whip from the can. Not now, not ever. Never, ever. It's loaded with sugar. I mean, think about it. It's full of air, so for the amount of "food" you are truly receiving along with the air, it's FULL of sugar. Instead, buy the liquid heavy whipping cream and whip some topping yourself with a wire whisk.

You might want to check out this list of acceptable foods from the Atkins site. Collard greens are listed as a high carbohydrate food and you may consume one cup per day if you haven't had more than two cups of salad vegetables per day.

Remember to limit your cheese consumption to four ounces per day. Also, it may help you to read this. I wrote that eons ago, but I still read it from time to time, and it helps to keep me on track.
