Hi all!

I'm Meg, and I've decided to go Low-Carb. Nothing else has ever worked for me, even trying to go vegetarian. 34, no kids (unless the cats count). I'm going to clean out my cupboards tonight and revise my shopping list for this weekend. What are some of your favorite recipes? Anyone know where I can find recipes for only one person? I'm not big on leftovers, and it's hard to find things that don't say "Serves 4-6." I'm currently 204# (weighed at doc yesterday and promptly cringed) and would like to get down to 135-140, as I'm only 5 feet tall. My biggest addiction is getting off Pepsi. I am also a big tea drinker, and will have to learn to drink it unsweetened when it's hot. Good thing I like many kinds of tea!

Also, what's your experience with Splenda? All I know about it is that my mom uses it because her S.O. has diabetes, and the berry cobbler she made with it was incredible...

Splenda is wonderful. There's a diet soda called Diet Rite that's made with Splenda. It took me a while to get used to the taste but now I'm ok with it. Check out the cooking forum you will find ALOT of info there. My favorite recipe and I'm pretty sure others will agree is the mashed cauliflower. TGIF's has REAAAALLLLY good 'faux-tatoes' (mashed cauli).
Welcome to the board and if you have any problems post and someone will be sure to help you. I've lost 42 lbs so far since las december and I fell off the wagon from April-October. I've just recently got back into the swing of things. I sorta low carbed and didn't lose or gain anything. But that made it ALOT harder to get back on like I want to be.

Welcome, Meg,

I love polish sausage with zucchini and onions sauteed in olive oil. I was getting too high on the calories though and decided to go with the turkey version. It's a good way to get your veggies in and tastes great too. Simple but good.

I have a single person george foreman grill that I adore. I buy the bags of boneless skinless chicken breasts at Costco and can make one quickly and clean up is a snap. I got mine as a gift or I probably would have never thought to buy it. It's also the best for burgers.

The worst part of giving up the pepsi might be the caffiene headaches. Good luck with that.

I was a big equal user and have switched to splenda, which I don't like as much but it's better for me so I am sticking with it. I have made some desserts from the recipe board here with it and it's good.

I just noticed you're in Denver. My new favorite market is Sunflower Market just south of University Hills mall on Amherst and Colorado. I thought it was just organic but it's everything and they have a good selection of low carb items. Their veggies are priced less than the grocery stores and look better too.

You have come to the right place. This is a great group here and we always love to put our two cents in!

As for the Splenda, I love it. I think you have to be careful because the packets are not the same as the pourable kind. You still have to count them as 1 carb per packet. The pourable kind has some kind of filler, which may give it more carbs...sorry I am sure it's just what I have heard. I think it's okay to use in moderation. I like to make some whipping cream with vanilla and splenda and serve it with fruit.

Cool, thanks all! Yeah, I found some splenda at a local dollar store, LOL. The box of little packets. I've noticed you don't need to use as much as you would sugar. It's awful in hot tea, though. hehehe

Frankly, I'd rather go off soda altogether than ever drink Diet anything. I can taste that nasty nutrasweet aftertaste.

I'll have to check that place out, it must be where the office depot and artsy theatre are is. Thanks!

One of the wonderful things about this way of eating is discovering lots of tasty new recipes, discovering new foods, and finding new uses for familiar foods.

We like Marcie's Cauli Mash a lot, it makes a great side dish to replace potatoes or rice. I make it once or twice a week, but I only make half a recipe at a time. Sometimes, instead of heating it all in one bowl, I fill 4 individual serving ramekins with the mixture. I cook two ramekins for our dinner and cover the other two with plastic wrap and refrigerate them to cook later. I happen to like cauli mash for breakfast, too (maybe I'm just weird, but it takes the place of cream of wheat or oatmeal for me).

For a breakfast bread or even dessert, I love to make the 3-minute chocolate cake. It only serves 1 or 2, but it is the easiest, fastest little cake you could want. How perfect is that? You can buy the almond flour pretty reasonably at Trader Joes. Bob's Red Mill brand has an almond flour, too, but it is really pricy.

meg... welcome!
i drank bottles of coke ALL day long for most of my life... last december... i suddenly got this desire to QUIT.. i have a coke machine right outside my business... so it was EASY to get my fix whenever i wanted...
i tapered off....then... JANUARY 12th of this year.... i went LC... i COMPLETELY quit on that day... i havent had a coke since..
i HAVE replaced it with tons of water.. cold water.. bottled water.. glasses with ICE water.. water water EVERYwhere...
if ANYone had told me last year that i would go 9 months without a coke.. i would have called them nuts..
it can be done... its a cliche'... i know.. but if I CAN DO IT.. anyone can..

I love Splenda and I love this quick and easy dinner recipe: You'll need some chicken, an onion, some broccoli, and CarbOptions Double Cheese Sauce or Alfredo Sauce. Cut up and cook the chicken with the onion (I also like to add mushrooms). Steam your broccoli (I use frozen and I nuke it when I'm in a hurry) and add it to the cooked chicken. Add 1/3 to 1/2 jar of one of the sauces and stir. My husband loves this and doesn't even realize he's actually eating a low carb meal. Marvelous!

Hi Meg and welcome!

I would suggest picking which low carb plan you want to follow and get the book, then follow it as closely as you can. This site is awesome for support and ideas--check out the recipes section for some great things to do with food. As much as you can, stick to natural foods rather than low carb products.

I love hot tea, and maybe you simply have to adjust to the difference in taste. I use splenda in it with no problem, but then, I've been drinking it for a long time now. Actually tho, water should have top priority...

Tip on the LC flour. Since you're in Denver. They have it at King Soopers. The first couple times I looked right past it. It's in a clear plastic bag with a large label on the front with all teh fru-fru healthy flour. I got some just in case and haven't had the chance to use it yet but it's nice to have on hand.

I'm planning on trying the 3-minute chocolate cake soon. It sounds good and now I have some heavy cream at home.

I'll do that, thanks! We do a lot of potlucks at work and I don't want to be left out because I can't eat anyone's stuff.

Earl grey masks Splenda sufficiently if brewed strong. (I like tea the proper strength, lol)

Does anyone have any other drinks that would work? I do drink a lot of water, but like other things sometimes when I go out. Anyone know the carb content of things like the raspberry iced tea in restaurants, etc? Fortunately, I'm not keen on fruit juices to start with, so that's no loss.

I have heard crystal light, the kind you buy in the bottles, is sweetened with Splenda. It's on sale right now at Safeway I think 2 four packs for $5. So much more than soda, but I guess not so bad to keep around for an every once in a while thing. I'm gonna try it this week.

I also was wondering just this morning if anyone had any suggestions for something to replace my morning juice. I have just been drinking water but would like some other choice. I don't drink coffee and not that big on tea. Though Earl Grey with milk was always my favorite. Maybe I could try it with cream instead. But I am still missing the fruity stuff. I unfortunately do like juices.

Club soda is a good restaurant drink. If you miss having a soft drink, ask for some lemon and add a bit of artificial sweetner to mix in the soda.

When I order ice tea in restaurants, I always ask if it's pre-sweetened or has any sugar in it.

Both Hansen's Diet Sodas and Diet Rite are sweetened with sucralose. Sometimes, I find them to be too sweet, so I mix it with plain club soda.

Similarly, you can mix club soda with sugar-free flavored syrups like Torani or DaVinci for a nice, low carb beverage. In fact, at many espresso bars you can order an Italian soda that's made with sugar-free syrup.

Noel, Diet Rite makes 2 other flavors other than the cola: White Grape and Tangerine, I think. I tried the White Grape on the advice of a coworker and I didn't like it, but you might. I'm not much on orange/citrus flavors of carbonated drinks, so I didn't try the Tangerine. Also, 7 Up makes a product called 7 Up Plus. It has 3 carbs per 8 oz. I think, but it is Splenda sweetened and has "minerals/vitamins" or something healthy in it. I tried it and liked it....it's berry flavor and is a pretty pink. But, I think those 3 carbs could start adding up real quick. I think it could make a lovely punch if you added some s/f sorbet type thing to it.

As far as a breakfast drink goes, both the Crystal Light Sunrise Orange and the S/F Tang are both aspartame sweetened. I drink Earl Gray iced most of the time, but now that it's beginning to get cooler, I will be drinking it w/a splash of soymilk and a couple of Splenda packets. Tea has alot less caffeine than coffee, so I'm glad I like it! I'll think about this and if I come up with anything else, I'll post in your journal.
