| What about Chili? No beans? Beef stew? No more potatos and corn in it... Wahhh help me out with good winter foods... Meg (who used to make a killer potato soup...) |

| Meg, Don't know about Tuna salad... I'm not a big fish eater. But, I do know you can buy a SF relish. I have some in my cupboard, but haven't found occasion to use it yet. It's made by Mt. Olive (or something like that... I'm not at home so I can't check). Chili... I use my preLC recipe and just use Eden's Black Soybeans instead of kidney beans. Turns out great (hubby even likes it), and only has 6 net carbs per cup. It's a crockpot recipe. If you would like it, let me know. I'll be interested to hear about a good LC beef stew recipe... especially if it's a crockpot recipe.

| Meg, Kroger's brand relish has 0 carbs. I use that in my tuna salad along with chopped onions and mayo, nothing too fancy. I make my chili with the canned tomatoes with the chilis added. There are some good brands with lower carbs than others but I can't think of which right now. I add onions and lots of spices. I always like the beanless chili better anyhow. I was sick a few weeks ago and came up with a great soup on the fly. It was simply chicken broth (I had organic on hand, boxed from KS not too expensive), canned veggies (I had some of those too I never knew what to do with them) carrots, peas, grean beans, not drained and then chicken (I cooked it in a pan on the stove first then cut it into big chunks). I just threw all that and some salt and pepper into a big pot and let it simer for a while. It was so good I would eat it a couple bowls at a time. And when I put it into fitday it was not high in carbs at all (when I was sick I wasn't overly concerned). That amkes me think I need to make some more of that. It was mmm mmm good. Perfect for chilly winter days.

| okay its time for you to open your borders to NEW kinds of veggies.. you say no more potatos and corn... how about turnips or rutabaga.. in your stew.. if you cook the meat ahead and at the last minnute ad in large chunkgs of zuchini its pretty good too. chili if you HAVE ot have beans in it.. there are black soy beans (i have some sitting in my cubard im going to try to make re-fried beans w/.. ) tuna salad.. either dont use the relish.. or how about dill pickle relish instead of sweet relish... or.. better yet.. mince up some celery for added flavor and "(sneak in a veggie there) a wonderfull comfort food that is LOW carb is a good veggie soup.... just rember alot of the lower carb veggies dont take long to cook... so its not excatly a veggie soup that takes all day to cook... do what ever meat you are putting in this ahead.. and add things like zuchini broccoli cauliflower celery cabbage maby a few slices of carrots (rember they are higher in carbs so.. maby just a few slices for flavor.. ) turnips ect ect.. your options are endless break out your carb counter and go threw the veggie isle see what they have if it sounds neat toss it in the cart go home throw it all together and taste if it needs something add something if not bon apetit..

| STEW (base recipe) stew beef cut into bit sized pieces (use kitchen shears) simmer for ever in 1/2 can tomato sauce, seasonings of choice (I use garlic powder and Lawery salt) and enough water OR beef broth to just cover (about an hour - til meat is fork tender) Now depending on what level of carbs your at, what's in the pantry and what tickles your fancy add green beans bell pepper cubed turnips celery onions mushrooms the trick really is to not over add liquid so that as it simmers your stew thickens up - I stir this frequently to make sure all the meat is evenly cooked. if you want it thicker use Xanthan gum - but not too much or your stew or soup will be on the slimy side. I make a beef with mushroom, onions and add cream in the final cooking - it's a great meal for cold nights!

| OOOOH! April--that sounds awesome--and what I had for dinner I am going to pay for the rest of the week--FRG Halloween Party--pizza and hot wings with veggies and dip. . .I did get the veggies in, but cucumbers and radishes and celery won't fill you up and the two hot wings didn't cut it either. . .so I did eat part of a piece of pizza. . .after pizza yeterday on a planned meal off. . .this is going to set me back.. and I was down this morning--GRRRR. . .I will ahve to try the beef stew though. . .That sounds fantastic! Thanks!

| Gyrfalcon- There is soooo much you can do with LC soups & stew. April's suggestion was excellent. The other day I took home cheap roast (is there such a thing these days), chunked it up and simmered it in olive oil, a little wine, garlic, and onion for a couple of hours (turned out so tender - yum). Then I added all our left over vegies that made any sense - like zuchini, celery, some cauliflower (it had been pre-steamed), etc. I thickened it with just a little be if Thick-N-Thin Not Starch. Its made by Expert Foods (I can get it at the local health food store or on line at Carb Smart). I only used about 1/2 TBSP mixed with some water and added it to my stew juices. Made 4 yummy servings. Another soup idea: you said you like potato soup - try cauliflower instead. Steam the c until is it is very tender (don't boil or it will be too runny. Then puree it in your food processor. Put in pot and add LC milk, half & half or cream. Variations: add cheese, broccoli or asparagus, chicken, clams for chowder - you get the idea. Yummy soup and very low carb! Finally, do a web search for LC recipes - there are a bunch on this site and many, many more on may other sites too. I have printed many and made my own LC cookbook binder out of them. Hope this helps Karen

| Fran McCullough has a great Vichysoisse recipe in her cookbook, which if served hot is basically potato leek soup! I can't post the recipe but maybe you can get the book from your library. Or purchase it.

| Sure, I'd love crockpot recipes! All of these sound so good. I do love turnips, especially mashed with butter. "champ". Although I have to say, I have all my life not liked most squash, especially zucchini. Spaghetti squash is good. I'll definitely try some of these ideas! Meg Quote:

| Here's my chili recipe... ![]() Beefy Bean Chili (2) 15 oz cans Eden Black Soybeans (2) 15 oz cans chopped tomatoes 8 oz can tomato sauce 2 lb ground beef 1 can condensed chicken broth 2 cans water (chicken broth cans) 2 cups chopped onion 1 green bell pepper, chopped 4 T mild chili powder 1 tsp hot Indian chili powder (or more!) 2 T garlic powder 1 T onion powder 1 tsp cumin powder 1 tsp corriander powder 3 packets Splenda Salt and pepper as desired Brown ground beef and set aside. Lightly saute onions and bell pepper in meat drippings for about 5 mintues. Add cooked beef and all other ingredients and stir well. Simmer for an hour or so until it starts thickening. The longer it simmers, the thicker it gets and it's best the next day! Total carbs = 94 with 6-8 servings at 12 - 15 carbs each. You can knock 20 carbs off the total by eliminating the fresh onion. That will get you 10-12 carbs per serving. Knock off another 10 carbs by nixing 1 can of tomatoes.

| Maybe I'm just tired...but my eyes were watering after reading that recipe, Marcie! LOL! The great thing about chili is that it can be made so many ways. Can we say "Chili Cook-Off"? I'm gonna try the black soybeans. I love most soy products and it sure beats trying to pick around the beans in my regular recipe. I may just have to make some this weekend, since the weather is turning wet and cooler and DH is sick. I'll be checking back in here for more recipes!
