I use wheat bran in bread/muffin recipes a lot. But it is not easily replaced - depends upon the rest of the recipe. In regular oven recipes some wheat gluten is necessary to make the bread rise. I often combine whey protein concentrate and wheat bran (also using gluten flour) and it works well. You can add in flax seed meal too, if you like. Sorry I can't help more with microwave recipes.

However, I have made breakfast pudding in microwave with eggs, wheat bran, LC milk. It is good but is between eggs and bread.
