Hi all... Thanks to all of you wonderful and encouraging people I am feeling better than I have in years! I am a true believer now in this way of eating. I am getting a little bored with my menu and this worries me. SO..... Everyone who feels like it... post your menus! I am in induction still of course and I will not be able to eat as much as some of you can... but I need some creative ideas so I can put together a grocery list and spice up my menu. Today my menu is as follows...

Breakfast:
Two eggs scrambled with shredded cheese
One cup boiled salad shrimp with a little garlic powder and butter

Lunch:
Two hamburger patties with one slice of cheese between
one cup of lettuce with a few slices of green pepper, shredded cheese three baby tomatos, 1/4th a cup of okra, 1/2 cup of boiled shrimp, oil and vinegar dressing.

Dinner:
One small piece of garlic butter fish (no breading)
one cup of lettuce with a few slices of green pepper, 1/4th a cup of okra, and a couple baby tomatos for taste, oil and vinegar dressing. (no cheese in this meal... had enough for the day)
One small cup of sugar free jello (this is my favorite part of the day)

I know I am not going to be hungry at all today and that excites me! What will you all be eating today? I am very interested. Thanks again for all your help... I am loosing weight and this diet is working for me. I LOVE IT!

i don't have a menu to post, but you may want to check out the recipie section here and/or on the atkins site, and maybe even get a low-carb cookbook. i don't use mine for the recipies as much as for inspiration. once you're done with induction, you can start adding things and after a while, you'll find your variety. it just takes practice.

My menu today:

Breakfast
2 soft boiled eggs w/ tsp butter all mashed in a bowl

Lunch
Grilled Chicken in Herb sauce (butter, thyme, parsley and garlic)
Grilled Zuchini & Red & Yellow bell peppers
Dinner
3oz broiled Filet Mingnon wrapped In 2 bacon slices (pre packaged PC kind)
1 cup steamed spinach w/butter
Hohum salad - greens, onions and cucumber slices w/citrus olive oil & lemon juice.

Snack
Mock Danish & cinamon - haven't tried this yet and not sure if I can have it, must dbl check carb count.

I am day 9 in induction and I feel great! We should post our menus daily, I would find it most helpful.


EDIT: just ran the menu through fit day... seems the danish would put me over :( - I guess I'll have to try it another day!

I am going to post mine everyday so that the wiser ones can point out any problem areas. I also find it helpful to me to keep track of what I eat everyday so that I don't eat to much of something or not enough of something else. If I had done induction properly mine would be over tomorrow... but I started over after trying for 8 days and then realizing I was doing it wrong. So now I am on day five I guess. I will be on induction until friday March 25th. I hope I can make it that long!

today I am having:

breakfast:
2 hard boiled eggs, 2tbs mayo - egg salad
coffee with cream and splenda

lunch:
left over chicken (roasted)
about one cup coleslaw (home made with mayo and horseraddish)
Cukes marinated with sour cream and vinegar about 1/2 cup
about 1/2 cup)plain yogurt sweetened with splenda and flavored with instant coffee

Dinner
hot dogs without buns, but with sauerkraut on one and chili on other
(sauerkraut sauteed with onions and little olive oil - chili home made)
some tomatoes

if I get hungry during the day will either have slice of ham, some cheese,
or some carrots (maybe 1/4 apple)

drink 3-4 quarts of water per day

Hi Leanne. I'm on induction for the next 2 weeks. I'm restarting, although I've been doing this since January, 2004. Haven't really gone whole-hog off the plan, but been a little too remiss for the last 5 months.
Yesterday (day 1)
b - 2 eggs omelet w/cheese and 3 sl bacon (love my bacon)
s - 2 hb eggs
l - ham/swiss chef salad
d - 2 slices roast beef, yellow pepper
s - 2 more slices roast beef (these are small slices)
did my water and green tea - not the full amount of water I should drink, but a lot more than I have been
today (#2 )
b - 2 eggs scrambled/cheese, bacon
s - celery with cream cheese
l - large cold shrimp with a curry/mayo dip, salad w/blue cheese
d - will be tuna salad in lettuce wraps, and some cauliflower/cheese.
feeling good about this, even if I have a headache.

1/2 atkins shake

Well This is day one for me. I am feeling ok..not out of the norm yet but I do anticipate the headaches within a day or two. Water is hard for me to drink.....I've been trying..but it makes me gag.
B- two hard boiled eggs
coffee with splenda and heavy cream
L-tuna salad with three slices romaine lettuce..made wraps , seasoned with chili seasoning
S- a chunk of cheese
D- chicken breast and broccoli
one diet dr pepper (vanilla cherry)
dessert-nothing...
My mouth is already growing bored....I will have to get creative with meals.....St. PAtty's is coming so perhaps I will make some of that corned beef caserole my sister preaches about.

I was never a water drinker either. Have you tried any of the flavored waters? When I first started, I would squeeze just a bit of fresh lemon in my water to give it a bit of flavor. I drink 2 liters of water every day now with no problem at all. I promise it does get easier! Hang in there!

I'm another veteran who is revisiting induction. I happen to like eggs for breakfast; but, I also like to eat reheated cauli mash (cauliflower mashed with cream cheese and brie) for breakfast. Often I'll have leftover dinner veggies reheated and topped with grated cheese*. I seem to do better when I include a veggie with breakfast.

Today

2 eggs fried in a tsp of butter, then mixed with green beans

I was hungry at noon, but away from home. I went to a convenience store and bought Acqafina flavored water (0 carb) and a bag of almonds to tide me over. I ate only 10 almonds, which normally are not suitable for induction. But it was the only thing in the convenience store that qualified as lower carb.

Late lunch: leftover sliced London broil reheated with green beans.

Tonight - homemade meatball soup and salad. LC jello for dessert.

*I really like to make spaghetti squash seasoned with garlic olive oil and Italian seasoning blend. It's great for breakfast, reheated and topped with a lot of grated parmesan (the real stuff - not the stuff in the green can). Pop it in the toaster oven or under the broiler for a few minutes to brown the cheese - and YUM!

Today-
Breakfast-Oatmeal and green tea...shake for a snack...Atkins CHocolate Royale

Lunch-3C salad with mixed greens, tomato, cucumber, shredded cheese and radish topped with 4oz chicken breast, cheeseburger with half the bun and sf jello

Dinner-2C salad with 4 oz chicken breast, fiesta style with corn and black beans, shredded carrots and red cabbage, strawberries w/whipped cream.

Back before low carb, I was not much of a breakfast or lunch eater. That of course, was one of my problems! So now, breakfast and lunch tend to be very simple and more of a "feed my body" issue rather than "feed my soul."

So breakfast most days is:
1 hard boiled egg, 2 slices bacon and a few celery sticks or green pepper strips. (Teel, I also find I do much better including a vegetable at breakfast!)

Lunch most days is:
About 2 cups salad with some meat or tuna and olive oil/apple cider vinegar dressing.

Mid afternoon snack is low carb yogurt with some berries (not for induction).

Dinner is usually:
A meat, a vegetable, a salad with perhaps some cottage cheese or sliced tomatoes.

On weekends I will usually make a LC Crock Pot recipe plus a more involved vegetable dish. Both last a few days.

Very boring! But I am trying to rehabilitate my body. Trying not to use food as an emotional crutch. But sometimes a half cup of whipped cream mixed with a teaspoon of unsweetened chocolate powder and some Splenda really fills the bill. And because I am so very close to Lifetime Maintenance, some days I eat an Atkins Advantage bar very slowly with my green tea and savor the experience.

1 oz cheese
two slices low carb toast
2 sausage links
(this is my most protein heavy and carb heavy meal of the day)

Lunch:
salad greens, cucumbers, tomatoes, black olives, roasted summer squash, bell peppers, broccoli and cauliflower salad with 3 oz grilled chicken and 1.5 tbs blue cheese dressing

Dinner (probably)]
giant salad
roasted green beans
steak

Today:
Breakfast - 2 oz Ham & 4 slices cucumber - had to run, slept in.

Lunch - 4 slices bacon & a celery stalk - not really hungry

Snack - Cheese string

Dinner - 4 oz porkchop w/ portobello mushroom sauce (homemade), 1 cup cauliflower and a salad (or more cauliflower).

Snack - Mock Danish - It is DH birthday today. Instead of a cake I bought 6 cupcakes, just enough for everyone else and none for me (i will have my mock danish). I figured it was the best way to avoid temptation. Now I just have to figure out how to put 32 candles in one cupcake...
