I was reminded of how cruel Easter can be to a low carber. The kids came home with baskets of Candy from school. My eye caught the peanut butter eggs I so LOVE. My daughter Sarah presented me with a hard boiled egg, decorated in light peach marble print. " Here mom, this is for you." I thought, I avoided these things like a plague on a low fat diet because one little egg is 5 g's of fat...HOWEVER, it is a 'free' food on Atkins! Yay! My mother in law called. She bought a lamb for us for Easter, another food I avoided because I never knew the fat content. To no avail, Lamb is also a free food!
Easter isn't so bad afterall.

I got requests from DH and DS(23 yo) for Easter baskets. At least I should be able to make them up with things I'm not INSANE about. No PEEPS in their baskets - they don't like them, and I would kill to have some.
I'm gonna color myself some eggs this weekend.

Augh! Peeps are another thing I LOVE. Now they come in such pretty colors. When I was a kid, we had either pink or yellow.....woohoo! Now they make them look yummier by coloring them purple, blue.

You can make a pretty tasty LC chocolate peanutbutter cup at home.

These aren't a free food, as they are they are very dense in calories (IMO only some green veggies count as free food). Store them out of sight in the freezer, as they can be very difficult to ignore!

LC Peanut Butter Chocolate (6 servings)

1 stick of butter (1/4 lb)
1/4 cup of natural peanut butter (no sugar added)
1 oz of baking chocolate, such as Nestles (avoid Bakers chocolate, if possible)
1 TBS of heavy cream
6 packets of Splenda (or sweeten to taste)
Optional: chopped peanuts or unsweetened coconut flakes

Melt butter and chocolate over low heat
Add peanut butter and cream
Pour into 6 foil-lined muffin tins
Chill until firm

About, 4 g. net carbs per serving, not counting optional ingredients

I made No bake creamy Lemon cheesecake (from this web site) today , deleted the cool whip. Added strawberries. It was wonderful and rich. I'm bringing that to easter Dinner. I just wanted to try it first. I'm the only on that is low carb.

Colored hard-boiled easter eggs are yummy and low-carb too! And kids love making them.

Good attitude V.E.!

Up until 2 (now 3) Easters ago I hadn't colored eggs in decades. Living alone who even thought of it? But when I started Atkins in 2003 I said what the hey. It's not like I won't eat those colorful bad boys. I find I really enjoy coloring HB eggs and having them on hand makes snack choices easy. I make my own dye from food coloring so I get a much brighter and higher range of colors.

Definitely not a free food, but I have eaten Hershey's "One Sugar Carb" Peanut Butter cups without gaining. Who knows, I might have lost if I didn't eat it, but it was a choice I made.

This year I will be hiding more small gifts than candy for my grandkids. I'll add a few of the traditional Easter treats, and also some Erythritol candies. This will also be the first Easter in memory that I will not eat half the candy as I prepare their "hunt!"

Hey, Teelbee, those look good! I am gonna try making them in little Easter candy molds I have.
And I have made Sharron's cookie recipe...they are really cute, and tasty.
I think posting photos of our LC Easter creations is a great idea! We can get some neat ideas for making treats for all those parties, birthdays, etc. coming up.

My mother is driving in from out of town to celebrate Easter with my husband and me. Fortunately, 2 out of 3 of us love deviled eggs, so I'll be making a big batch of those.

Good idea about the low-carb peanut butter cups - anything can be duplicated! But yes, I am craving Hershey's Kisses, Cadburry Eggs, and the rest of it ... I'll get through it! lol

Default Ugh, but who wants it???

I have had moments at holidays where I lost it and ate a sweet, and then said what the hell, I'm doing it, I may as well do it... and felt so gross and bad afterwards, and the backslide in my weight loss and energy levels was enormous, and the sugar made me feel all crazed and headachy, I could feel the water retention, it is like living with PMS all the time, times 10! And you know, that holiday brightly wrapped junk is NOT worth that. But you want it, so you do it. For me, since doing it several times, I have now psychologically associated cheap wrapped candy in drugstores with the terrible feelings they invoke and they are entirely unattractive as a result. I was thinking about this tonight as I was coloring eggs with a client. The clients are getting chocolate bunnies and the whole nine yards for tomorrow, so I had seen all of this, and thought, hey, this is a holiday where the big yummy is actually GOOD for you, and people forget all about it... HARD BOILED EGGS! How fun is that? It was great. Atkins and probably a lot of wise followers would perhaps understandably not endorse this, but what worked for me with the holiday candy stuff is actually doing it, for that day, or even a couple afterwards, and then feeling the aftermath. After a few times, I remembered how gross it was, and the craving is way more dealable. Plus if you eat natural, even crystal lite tastes like nuclear waste...
