| I was wondering if any one here does any canning. Every summer I spend hours making home made jellies. Mayhaw dewberry grape and any other that we get good harvest of. I also make fig preserves and can all my veggies plus make awesome picante sauce. Makes me kind of sad I make all that stuff but cant have anything but the picante sauce. My question is does mayhaws have carbs and I was wondering if using spenda would work with sure gel and how I would figure the carbs. I adore mayhaw jelly and hope some one here can help me. |

| The mayhaw, little known in other parts of the country, grows both wild and cultivated in the Deep South. It is a member of the hawthorn tree family. The branches of the tree bear thorns, which make it tough to harvest by hand. The fruit of the mayhaw is a berry about one-half to three-fourths inch in diameter which ranges in color from a yellow to deep red. The mayhaw berry resembles the crabapple. It ripens in mid-April to early May, hence the name "mayhaw". Not a clue on carb count tho :(

| What about making "jam" instead. I suspect that surejel or any other pectin based jelling mix would have a problem with the jelling if sugar is not used. Although, I know if you use TOO MUCH sugar, the jelling will break also. I could be wrong. I would try to e-mail "Splenda" and "SureJel" to see if you can get a response from them. They have to have experimented by now. Also Smuckers might be a good company to e-mail too, they have no sugar added jams on the market. OR how about adding ONE packet of dissolved Knox gelatin to the mix. Jam would work better with fruits, since you use the whole fruit cooked up and don't strain it out. I have contemplated this also, since we have both green grapes and concord grapes growing on our property. I might just experiment this summer, but it won't be until August. But unfortunately, our grapes have big, honkin' seeds in them. They make WONDERFUL jelly tho. As for canning veggies..............just don't use any sugar in them. And watch how much salt you put in them. I've canned tomato sauce before LCing and used to put sugar in, but if I ever do that again, you can be sure I won't put in ANY sugar. I WILL use a bit of Splenda tho.

| HEY, I found THIS page just by searching on Sure Jell: Sure Jell Low or No Sugar Recipes for Jams and Jellies There are three recipes on there for "triple berry", "strawberry" and "peach" jams. They made my mouth water. It appears that there is now special SureJell out on the market that requires less sugar!!!!!! And they've partnered with Splenda. I suspect they are both Kraft products. Speaking of Kraft.............I LOVE their LC BBQ sauce!!!!!!! Gotta love Kraft!!!!!! HTH!!!!!

| Geesh Thanks for all they info lol. Ask and yee will recieve and pronto here. I will check out the site. I can't make jam with the mayhaws cause they have the huge seeds and not a lot of pulp but i can use the site to help me make the other jams. Thank you once again. |

| Same here with my grapes and their big honkin' seeds. But it's nice to know they have put out a product that will work with Splenda. Now.............the trick will be to find a store that actually carries it!!!!!

| I can in teh summer. What I can is Sockeye salmon. I can it plain and smoked. I lightly smoke it as that is all it needs if you are going to can it. I then have plenty os fish protein for the year. |

| I've canned cherries in their own juice. For the juice, I boil some of the pitted cherries with water, then crush and strain it. Sometimes I added 100% black cherry concentrate for additional flavor, sometimes not. I usually wait until I open the can to add additional splenda for sweetening.

| Mayhaw jelly CAN be made with splenda - or with half splenda half sugar. It set up fine with my friend and I. ~ as for carbs, sorry I don't really know the answer to that one. Vickie |
