Default Please Help! - Vegetarian Daugther

First of all, I would like to say, I have enjoyed everyone's success stories. It's encouraging. Last year I went on a Low Carb diet and lost about 25 pounds. But within a year, with my busy life style being a single mom, I went off it and gained it all back and then some!

My problem is; my daughter is a vegetarian and when she is with me (every other week) it is extremely hard to cook two meals. I have yet to find little if no vegetarian low carb meals and after an 8 hr day, the last thing I want to do is cook 2 meals.

Does anyone have any suggestions? What I am hoping to find are quick & easy low carb meals that I can prepare for myself since I have to fix veggie food for her. Also, variety! I am stuck on eggs in the morning and tuna for lunch and burgers/steaks for supper. I know if I can just get back on the right track I will feel much healthier. I don't have much time for searching for the right recipes. I am not too picky when it comes to foods. It would be nice to find a meal plan designed for a week so I can follow it. Am I asking too much? I think if I can just refocus on eating healthily - the low carb way, and easing into exercising, I will have more energy to prepare 2 meals. But for now, I need some simple recipes to get me going.

Please Help! I can use any suggestions!

I was stuck in the same rut until my DH saved me and himself literally by buying a couple o low carb cook books at the half of book store here in town. Lots of good stuff in them. you can also use the internet to research some of the hundreds of LC cookbooks out there. There are even some that call themselves time saveing LC books. And recipes abound. Even this website has a few.

Believe me if boredom sets in with your food the temptation to quit is huge. Don't let it happen. Cut it off at the pass so to speak. You will thank yourself later.

By the way there are even a couple of LC books out there for Vegetarian cooking. So Have fun with the food and cooking I'll bet you'll be glad you did.

Have you thought about joining your daughter in a vegetarian meal to avoid cooking 2 meals? My daughter is vegetarian also, and there are lots of great main course meals we enjoy together. How about a pan of veggie *lasagna*...using zucchini in place of noodles, and a home made marinara sauce and some extra cheese in place of the meat. How about some veggie quesdillas on LC tortillas? Garden burgers sans buns and eat between 2 lettuce leaves with lots of fixins like cheese, onions, pickles, and a side of *fautatoe* salad made with cauli in place of the potatoes. The possibilites are endless. A nice veggie quiche or overstuffed veggie omlet? A big garden salad with cheese, boiled eggs, lots of salad fixins, with some ranch dressing, or even a caesar salad with chicken for you and some tvp cooked and spiced up for her? Tofu and veggie *scramble* with assorted veggies, kinda like stir fry?

Awesome!! Thank you so much everyone! Too bad I can't have Shelley come to my house and cook.
I am running down to the book store after work tonight to buy a vegetarian cookbook so my daughter and I both can enjoy LC cooking!
I'm glad I've found this site.
