Default kefir

Hi, I am in the induction phase right now. I know from
the new diet revolution book you are not supposed to
drink milk,but I have been drinking kefir for about a year
now. I like to drink mine about four days after I make it
because I like it tart. I belong to a yahoo group on kefir.
The experts over there tell me after so many days there
is probably no lactose left. If this is so can I still drink it
on induction? Thanks Olivia.

Olivia, many of us on this board brew our own kefir. I just LOVE it.

But, unless you make cheese out of it (which is delicious) it really isn't an induction food and I know of no research to confirm the widely circulated idea that it's a carb free, or even very low carb item. Clearly the fermentation does convert some of the lactose, but how much is just not known.

So, put your babies in the fridge for a couple of weeks and then make kefir your first addition in OWL. You'll have to play it by ear as to how you want to count it. Most folks here give it the full count treatment and some "discount" it slightly. For me, I pour off some of the whey when I strain and this gives me a much more blood sugar friendly product. It's also a bit thicker, too and still works up a nice "fizz factor."

You'll just have to watch your own reactions to it and go from there.
