Aspartame is often vilified on the web as being responsibile for a wide range of maladies; but there is little or no science that backs up. To me, it seems to be one of those rumors that feeds on itself.

There is a good article on the Urband Legends site about aspartame. Basically it finds that the rumors are false:

Quote:
Claim: The artificial sweetener aspartame is responsible for an epidemic of cancer, brain tumors, and multiple sclerosis.

Status: False.

http://www.snopes.com/toxins/aspartame.asp
Dr. Atkins book does indeed warn that aspartame may stall weight loss for some individuals, but his book does not support that claim with any references.

As for the bacon, Whole Foods carries nitrite-free bacon. When I eat bacon, I just use the regular bacon. I don't usually eat it so often that I worry about the nitrates (too much bacon definitely impacts my weight management efforts, LOL!)

For MANY of us here, using diet products containing this sweetener caused us to stall and even gain. I have even had some suspicious bloodsugar readings after using Nutrasweet!
Additionally, there seems to be a rather large consensus that sugar-free foods sweetened with Nutrasweet cause more cravings than those sweetened with sacchrine or Splenda... But as mentioned above YMMV (your mileage may vary).
I *occasionally* still use Nutrasweet (when I can't find Splenda), but for the most part I avoid it. I LOVE the new Diet Coke with Splenda! To me, it tastes MUCH better than the old Diet Coke.
As for the bacon, I think you can find nitrate/nitrite-free bacon at a butcher shop and/or health food store (like Whole Foods), but not I'm not 100% positive about that. Like Maggie, I just eat the good old Oscar Meyer stuff -- just not too frequently!
HTH,
I'm from the Midwest and I've never HEARD of Diet Coke with Splenda! As a self-proclaimed Diet Coke addict, that would be the answer to all my dreams. Where do I get it? Is this something they are trying out on the coasts?

Kroger sells Diet Coke w/ Splenda in cans only. It was pretty wide spread a couple of years ago in 20 oz. bottles but not now.
