    Default I Need A Cheese Substitute

    I am very lactose intolerant. I don't remember how I got through Atkins the last time without eating so much cheese. I had surgery in June this year and my body definitely isn't tolerating the cheese as well as before. I was quite ill all weekend from eating cheese. The gas, bloating, cramping and back pain was severe. I finally had to take magnesium sitrate to relieve the symptoms.

    I know that cheese is a big part of a lot of recipes b/c it definitely adds flavor. Any suggestions?

    I understand that there is soy cheese.... not sure what the carb counts are, but those friends that are veggies says its not so bad...

    I love Silk Soy Milk. It's wonderful. I don't know what the carb count is because I was off Atkins when I was using it and didn't care . I will definitely look for the soy cheese. If it's anything like the milk it will definitely be worth the effort to cut back on carbs come place else.

    I too, am lactose intolerant. A couple of ounces of milk to me is like Kryptonite to Superman. I also used soy products for a while. Silk makes an unsweetened organic soymilk that is low is carbs. It comes in a dark green carton and is yummy.

    The reason I quit using soy products is because I read alot about the possibility that soy suppresses thyroid function and that is *ALL* I need at this point.

    Therefore, I do eat regular dairy in moderation, always with a lactase supplement to allow me to live through the indulgence. One pill (9000 units) is enough for any amount of dairy in my experience. You can buy it at any grocery store. Lactaid or Dairy Ease are common names. I used the store brand. Same stuff, much cheaper. HTH
