I bought several, but I don't cook a lot.

the easiest one is George Stella Low Carb
Sharron Long has a couple, but they are harder to find.

Use the search on the front page of this site to find and order from Amazon, and you will be helping to support the site.
And there are probably a TON on ebay.

Big vote for George Stella. The emphasis is on good, fresh foods and easy to find ingredients. The recipes I've tried are very tasty.

Dana Carpender's 500 Low Carb Recipes is a good start. The recipes are easy to follow. In addition she also provides lots of information about staple ingredients and some of the unusual ingredients you will want to use in creating a low carb kitchen.

I have 3 of Sharron Long's books. (She is a member of this site) and I believe they are available at Amazon. I saw George Stella's book the other day at Barnes and Noble or Borders, but didn't buy it. I would suggest you go to a book store, go to the Nutrition section and scope them out. Look through them and see what appeals.

I would suggest Half Price Books. I've picked up several there.

I sat down at Barnes and Noble one night with every single low carb cookbook that they had, and read them all. I ended up only buying one... George Stella... It's a LOT cheaper on Amazon, and he has a new one out now too, which I plan on buying soon.
