| Poor Hawaii!!! A whole bunch of us must have been posting at the same time Well... now you know, so you can try to make better plans! I love veggies now, and I was never a big veggie eater. I actually sit here sometimes and can't hardly wait until the next time I get more!

That would be very stressful to me!)]? Or that you don't know how to cook? (No crime. My mother-in-law doesn't and she raised two kids just fine!) Or that you're not a good cook so you'd prefer not to do it? How did you eat before this change? Did your husband cook most meals? Did you eat out frequently? Did you just have pre-packaged food most of the time? I'm asking these questions because I get the feeling you're bored because you don't quite know how to integrate this way of eating (woe) into your lifestyle. It is my firm belief that this woe *can* be integrated into any lifestyle with understanding and forethought. So, we (the members of this forum) need to understand your lifestyle a little more before we can offer *really* helpful suggestions. So........ ~K |

| Ok K, Here is a little background. I grew up in a giant family. Basically I was kicked out of the kitchen because there were to many cooks. I married a man who loves to cook. I mean he loves it. Plus he is really good at it. For the last 10 years, especially when we lived on the mainland, we ate out. Me, I ate everything bad for me, my husband, ate everything good. I just am horrible at making the right choices when it comes to food. My husband when he cooks generally makes really healthy food. In Hawaii, we eat lots of fish and veggies. However, now my husband owns his own business so he has not been cooking as much. He says lets just pick something up. Well we know what that means. French fries and hamburgers. For the last year I have been eating like crap. My child eats good. I make sure of that. Yet he eats a lot of baby food and now toddler foods from gerber. WHen I say I can't cook, I can't cook. I didn't even know how long to cook eggs. I don't know how to cook chicken (frozen kind) and when I read directions I don't understnad. Plus they use ingredients that I have never heard of. I tried reading the joy of cooking, but they tell you how to cook things in a very difficult way. Time wise. I am a fully self contained teacher of behavioral students. Meaning, I am in one room from 7-3 with these kids. Then, I go watch our store till 5:00. I rush home to see my little boy and we play and laugh. I feed him his dinner, play, give bath and play some more. In 5 minutes I need to make my dinner. Then we read stories, give kisses and it is bed time. That is 8:30. I jump in the shower and then pass out in bed myself. My husband comes home sometime around 6 and I usually have a microwave dinner out. Or I cook him pasta with can veggies. I don't eat the pasta so I have been eating a lot of can green beans. I have ham roll ups and I am pau. Last night, I was starving. I had 4 scrambled eggs and 6 PIECES OF BACON! UGH. I felt horrible this morning. Saturdays, I actually sleep in to 7 and get to lay with baby. We get up and have breakfast and then I go watch the shop with my son and my husband spends the day in the field. OK, On top of that we are remodeling our house and just bought the house next door. It is a dump and totally needs to be redone. However, we live in Hawaii so you can imagine what the place will be worth. So Sundays we go to church at 7 and thank God for what we have, which really is a lot, and then it is cleaning and working from then on. I don't exercise because I just don't have time. So, can you offer advice? HAWAII

| HI Hawaii I posted this in the day by day induction, but I'm not a cook by any means. I can read a recipe, but balk at more than 3-4 ingredients. this is my typical day. typical day for me, still on induction - breakfast - one of 2 depending on my time 2 eggs (scambled w/ cheese, fried, or hardboiled), 3-4 slices of ready cooked (microwave) or bowl of maggies cereal (wheatbran, soy protein, flaxseed) - 1/3 cup dry, add water microwaved 2 minutes, add a little sf syrup for extra flavor (I just use smuckers sf syrup for this) This is a staple. I make up a giant ziplock bag and just keep in the fridge for when time is short. I also throw in a suitcase when going on trips. lunch - sometimes an atkins shake (only low carb slick I do) and a big salad. I keep bags of romaine hearts/bits in the fridge. Throw on some bacon bits (sometimes), cheese (either shredded cheddar or parmesan), and low carb dressing (caesar is my favorite) I also keep a package of sliced ham (check the carbs) and swiss cheese, and sometimes make a chef salad. dinner - will usually make some kind of meat. a pork chop, a small steak, a frozen hamburger patty. (I will put cheese on the patty). usually broiled, or a skillet. then somekind of veggie. I keep a big of cauliflower in the fridge, and nuke a bowl of it for mashed fautatoes. or more salad. Hubby is wonderful. most of the time he settles for some kind of frozen meal, or will have meat with me and I throw in some fries (oven) or whatever. I also like cold shrimp from the bag -with a curry dip to replace cocktail sauce. Just mayo, curry powder and red pepper to taste. obviously, I don't cook either. never said I did - I hate doing dishes. the microwave is my friend. I also keep cucumbers sliced in bags for salads, and spears of yellow peppers - these are mostly my snackies.

| Last night you found the time to cook bacon and eggs. Bacon takes longer to cook than most of my meals...seriously. My George Foreman can cook me a steak in five minutes. I use that five minutes to throw a salad together. Poof! Dinner is served. It *can* be done. I am a full-time student, full-time volunteer with my husband's unit, I have a 7 year-old who is in cheerleading and theatre, a potty training two year-old with play dates, runny noses, and a very fast running speed, a giant Godlen Retirever who needs exercise, a house to keep clean, laundry to do, letters to write, bills to pay, soldiers to support, CNN to watch, worrying to do when I haven't heardfrom my soldier in over a week, home repairs to make, repairmen to call, doctor's appointments to schedule and keep for my two year-old with kidney issues...I mean, really. I could go on and on. The time is now to revaluate how you spend your down time. You can't really be going non stop 24 hours a day, right? Working seven days a week? If so, you're getting in a tremendous amount of exercise. Enlist your husband's help. Ask him to boil some eggs, or fry up a steak. Save those things for snacks and salad garnishings. Salad comes in bags. Buy those. Here's an example of my day. I realize that your day is different, but I'mjust trying to show you how I fit everything in, AND still have time to spend taking bubble baths, applying makeup, playing with my kiddos, and writing here. 5:00 a.m. wake up. 30 minutes of me time, to check email, write letters to DH, etc. 5:30 am. start my breakfast if I plan to cook it that day, otherwise heat and eat. Done eating by 6. 6 a.m. wake up the kids. Oldest has to be at school at 7:20. While they are waking up, I hop in the shower. 6:15 get the kids ready while brushing my hair and teeth. Start some laundry, run the dishwasher, straighten up the kitchen and living areas. 7:15 leave for daughter's school. 7:25 home again. youngest kiddo eats her breakfast (oldest eats at school, thinks it's "cool") then plays with toys while I tackle homework for about 2 hours. 9:30 play time. I just get down on the floor and play with her. we read books, watch tv, play make-believe, whatever. 10:30 time to clean. Go upstairs and make the beds, take out trash, reboot the laundry. Tidy the bathrooms. 11:00 Make lunch for the kiddo. When she has hers, I turn right back around and make mine. Lunch is done and dishes are in the dishwasher by 11:30. 11:30 down time. Kiddo plays, usually naps. I relax, check email, etc. 12:00 While she's asleep, I make phone calls. I like to call at noon, b/c everyone is out to lunch. I can leave a message and not get trapped on the phone. Between running a household and all the volunteer work I do, I average about 30 to 40 calls a day. This takes about an hour or so. 1:00 Kiddo wakes up and needs a snack and a sippy. 1:30 After cuddling with her for 1/2 hour or so (she needs this after each nap) we take the dog outside to run around and play fetch. 2:00 Kiddo plays while I try to get in some more homework. 2:30 leave to get oldest from school. 2:45 home again, oldest needs her snack. we talk about her day, do her homework, get everything ready for tomorrow, then the girls play either upstairs or outside if it's nice. 3:15 Check laundry situation, dishes, and tidy up today's messes. 4:00 If it's a shopping day, I leave now. I can beat the crowds at 4:00. This is when I run most of my errands. Post office (I go weekly to mail packages to DH), commissary, PX, whatever....between 4 and 5 is when I try to go. 5:00 home (if I left), making dinner. My kids are not low carb. youngest has kidney isues, remember. So they usually get an entirely separate meal from me. I spend about 15 minutes cooking dinner each night. 6:00 dinner is done, served, eaten, cleaned up after. kids are going upstairs to take their baths. I clean the upstairs bathroom or my bedrom while they play. 7:00 quiet time for kids. they are allowed to play quietly, watch quiet tv, read, draw, etc. My oldest has ADHD and needs time to transition from things, so this is vital to her. I use this time to plan for the next day. The menu, the events, appointments, etc. 8:00 brush teeth, wash faces, brush hair, meds for kiddos. Read a story, then offf to bed. 8:30 I head back to my homework. I'm usually up for another two hours or so working on school work. When I've finished enough of it to call it a day, I relax with some TV, or take a hot bath.

| Wow. I guess the grass is always greener elsewhere, but not in your case. Just kiddin. Yeah, I guess we all live fast and hard lives, but I do love mine. I can write now because my kids here at school are in lockdown. This means there was a fight so we sit for 6 hours in a room with no talking or moving. I love it to behonest! Anyway. I am so happy to have someone like you here. You are great. So, where is your husband? I must confess we might not want to talk politics. I hope he is ok and I send prayers his way. HAWAII

| Michelle, where there's a will, there's a way, eh? Hawaii, can you and DH spend time on weekends cooking LOTS of stuff you can freeze and then heat and eat? I did that while I was working full-time. You make a HUGE mess one day, all day, freeze everything up and then you're set for a week or two. All you have to do is add fresh salad fixins with each meal.

| YEah, after my response I started looking. You know, with my eyes open. Found it and printed it out. Now I can say things like "my lc diet is going good except for my dh and ds get to eat all the good stuff!" Alright. Fun! HAWAII
