Welcome, Harl.

Look in the One Minute Muffin thread in the Low Carb Cooking section. This has proven to be a very versatile breakfast for a lot of us. There are tons and tons of variations to it. Experiment!

I never used to eat breakfast. Now I wouldn't miss it!

Welcome, Harl.

There's a thread on breakfast ideas here:

http://www.lowcarbeating.com/bb/show...239#post232239

Some are more "portable" than others and some are so quick to prepare that you can get your breakfast in before you leave home.

HTH, & hope you'll make yourself at home.

This is what works for me. On Sundays I boil up enough eggs to last me a week. Then I fry up a pound of bacon. Also make a quiche. I cut the quiche into pieces and freeze it. I made a dozen lc muffins and freeze them also. Now, I have all kinds of choice for breaky seeing as I'm not a morning person. Bacon can be nuked for 30 sec. to warm it up and eggs cut up and nuked for 23 seconds. Or if I'd rather warm up a piece of quiche or a muffin. It's easier for me if I have choices instead of just having the same thing everyday.

Oops...just reread your post and see that you want to eat on the go. Well, you could always take the quiche and put it in a napkin and eat it that way. Or take a muffin with you, I guess.

Good luck on your weight loss.

Thumbs up Re: Breakfast.

Harl,
My husband -- who has recently joined me on the low-carb bandwagon -- was asking the same question... I told him I'd make him a 1-minute-muffin. He looked doubtful when I handed it to him as he was going out the door. Fifteen minutes later, the phone rings and it's him on his way to work:
I WANT ONE OF THOSE EVERY DAY FOR THE REST OF MY LIFE!!!
So, I showed him how to make it (VERY SIMPLE) and he has been eating them EVERY DAY for a month. There are so many different ways you can change the flavor, we never get bored with it.
AND it has the added benefit of keeping you "regular," if you know what I mean -- a common problem with eating this way.

I just tried the 1 Minute Muffin yesterday and WOW! I made mine plain, no sweeteners or flavoring. It tasted very Whole-Grainy, which I love.

But as for on the go foods... I like to use egg salad, tuna salad, etc... wrapped in a lettuce leaf.

remember that you can eat whatever you eat for dinner or lunch for breakfast ...

grilled chicken, fish, beef, pork...
salads, tuna, egg, lettuce, etc.

just cause it is breakfast doesn't mean that it has to be breakfast type food...
peanut butter on celery sticks, cream cheese on celery sticks,
ham roll ups (ham with a little cream cheese and a piece of pickle or picled okra roll up and munch)
