Default Is everyone ready for a low carb Thanksgiving?

What's on the menu for everyone who celebrates this holiday?

We'll be having turkey, mashed cauliflower, green beans, one sweet potato (a bite or two for me and the rest for the husband) and a pumpkin cheesecake if I can find some sort of recipe that looks good. We also have mashed potatoes and a regular pumpkin pie for the husband who is not a low carber.

Has anyone used low carb bread for stuffing and if so how did it come out. I love stuffing.

As it will be just DW and me, we are having a simple Thanksgiving dinner. Roast turkey stuffed with my l/c cornbread and pork rind stuffing, gravy, broccoli, and a new dessert that I will create that is a l/c Cape Cod cranberry velvet pie. My non-l/c dressing was a combination of corn bread and regular bread. When I converted to l/c, I made my dressing with Atkins corn bread and a soft l/c bread I found. It worked well. (However, that bread is not made any longer.) The next year, I saw a recipe for a pork rind stuffing and decided to replace the bread in my stuffing with crushed pork rind. It worked well, so I am doing it again. Except for that soft l/c bread, I have not found one that was worth using in sandwiches as a result I have doubts about how well they would work in dressing.

I'd be interested in the recipe for the low carb with pork rind stuffing mix if you have the time to post it. I just can't see going without stuffing if I don't have to.

Here is a version of Rani's pork rind stuffing from another board.
1 3-4 oz. bag of plain pork rinds, lightly crushed (not powder)
1 egg, beaten
1/2-3/4 can of chicken broth
Half a small onion, diced
3 stalks of celery diced
Herbs to taste (I used basil, tarragon, sage)
Salt & Pepper
2-4 Tbs. butter
1/2 cup spicy sausage, cooked
1/3 cup fresh mushrooms

Cook the onion, mushrooms and celery in the butter. Put the pork rinds in a casserole dish. Toss in the cooked veggies. Pour the beaten egg over the rinds and veggies and mix up a bit. Add the sausage and seasonings. Add broth (more if you like a wetter stuffing). Mix well. Bake uncovered at 350 about 30-40 minutes (mine had a little crust on top at that point).

What I do is bake 2 envelopes of Atkins corn bread. crumble the corn bread and hand crush 1-2 bags of plain pork rinds and add to the corn bread. I then saute diced onion and celery in 2 sticks of butter, black pepper and poultry seasoning (the spices I just do to taste but typically 2 tsp pepper and 2 Tbls poultry seasoning. I then moisten the cornbread and pork rinds with 2 cups of turkey broth, add the sauteed onion, celery, and butter and throw in some unsweetened dried cranberries, toss and add more broth if too dry. Then I stuff the turkey with the dressing and bake.

Thanks for the recipe, it looks good except that I don't know where I can get the corn bread mix (I've never even seen it before) by Thanksgiving. I guess I'll try using the pork rinds with a bit of the low carb bread I was thinking of using. Stretchhhhh the carb count out per serving.
I appreciate the recipe. I hope you have a lovely dinner and much to be thankful for.

Chelsea, I don't think they make the cornbread mix any more. What I will try, when I use up my mixes, is to make a few of my jumbo corn One Minute Muffins and use them in the dressing. I hope you enjoy the holiday.

I'm ready. I'm having a very small feast, inviting only DH#3 over for dinner.

I've just finished making a punkin pie (variation on George Stella's praline pumpkin pie recipe) at 1/2 a recipe. I made up a perfect little pie pan by unscrewing the handle from a small saute pan. Whipped cream will go on top.

Since I'm not doing a whole turkey, I made up a nice stock with a couple of chicken wings, veggies, herbs and white wine for use in the stuffing and gravy (which I'll thicken with some Thick'n'thin).

I've made up a batch of fresh cranberry sauce, and mixed up a nice stuffing mix (with a couple of slices of lc bread, chopped walnuts and the usual celery, onion, spices, butter, stock, etc.) I'm going to finish it off in muffin tins, a la Rachel Ray's "stuffin muffins".

Veggies will be a tossed salad and a mixture of asparagus and artichoke hearts sauteed with onions.

For the turkey, we got a brined breast from Wegmans. It has some sort of suspect ingredients in the brine (like honey) but it doesn't seem to be enough to jack up the carb count much. They're labeling it as 0 carbs per 2 oz serving. We also got a couple of thighs, so there's some dark meat. They're not brined, so it will be sort of a taste test ... and some guaranteed left-overs.

A bottle of wine for the meal and a relish tray (to include a couple of kinds of pickles I made up this year) to nosh on while the "bird fractions" cook up should round things out.

Dinner is planned to more or less coincide with half time of the Detroit/Miami game .... which will be viewed on my new (embarassingly large for my little house ) plasma tv. My personal latest reason to be thankful, although it was, perhaps, more painful to have my first game be Ohio State beating Michigan in HD.

Since DDad is out of state feasting with his sweetie, it's only DH and I this year. We're going to a lovely candlelight Thanksgiving dinner this evening at a local hotel, and I hope to be more enticing than the turkey! I may opt for a glass of champagne and a smidge of sweet potato, but otherwise, it's LC all the way.

I'm taking non-LC sage stuffing and caulimash to a potluck with old friends. I made a rich turkey broth from turkey necks yesterday to give the stuffing the authentic flavor. I will most likely eat a scant amount of the dressiing as it's my favorite Thanksgiving dish. We quit cooking stuffing in the bird several decade ago, as it tastes just as good w/the broth and is much easier and safer.

DH and I will have LC pumpkin/cream cheese custards w/whipped cream for dessert when we get home. Hopefully, that will forestall diving into the regular pies at the potluck.

Maggie, for the first time, yesterday I roasted a Foster's turkey breast and 2 large thighs. They turned out to be ~better~ than a whole roasted bird as it was so much easier to achieve the right temperatures for the breast and the thighs. I may never cook a whole bird again! Who knew?

I'm with you, Teel! This was my first time cooking turkey "parts" and they turned out to be wonderful! And, I don't know if it was the brining or what, but the breast was the juciest white meat I've ever had. I wouldn't have missed the dark meat if we'd skipped the thighs.

I'll be doing this again, and I won't wait a year, either.

Well, T-day is over but I had to post some of my new recipes on my journal page. Christmas is coming and some of these recipes will be repeated. All my family members but my DD's are regular carbers, so I had to make the traditional stuff along with some LC things. Here's a link to my journal page where I posted the recipes. (at the bottom of the page.) My Journal Page Perhaps some of these recipes will inspire someone for Christmas. Anyhoo, I like to share when I find something yummy. Feel free to ignore the traditional, HC stuff.

Maggie, I saw on RR's show how to do a 20 lb bird in 90 minutes. GeeeeZZZZZ I wish I had done that, my bird was NOT done when we were ready to serve. BUT, DH cut it all up, slopped some broth over it, covered it with foil and stuck it back in the oven. It turned out fine. I might brine a cut up turkey next year......................if I remember, that's a long way off. LOLOLOLOL

Last year, I believe I made LC stuffing with LC bread (just for myself) and made traditional for everyone else. It was GOOD. I use Healthy Life Bread. Maybe I will do that again this Christmas for my DD's and myself. Heh heh, we'll see.............

thanksgiving was wonderful... i ate what i wanted except for no sugar, deserts,
