| Melissa, my favorite snack is the One Minute Muffin. It's quick and easy to make, and so versatile. I love to use peanut butter and cocoa in it. And I also love it with cinnamon. And then coconut flavor is good, too. I also like to have cheese sticks for a quick snack. They are individually wrapped, and it's great for portion control. If I slice the cheese, I'm liable to eat a half pound all by myself, especially Swiss cheese! And a zip bag full of cut up veggies can be a great snack, if you can keep them cold. Cucumbers, red & green bell peppers, celery, jicama. Yummy! |

| All of what QueenMama said and raw Broccoli dipped in ranch makes a great snack. Celery filled with cream cheese and sprinkled with red pepper flakes is great and a lot of chewing like the broccoli. A dill pickle for the days when you've got to have some salt. But don't overlook a drink, sometimes a nice flavored cup of tea will do the trick just as well as a food snack. I have a nice vanilla tea that almost whispers, "Relax" when I drink it. There are so many choices you just have to start packing stuff in (have some variety)to see what works for you. good luck |

| I spend Sunday preparing my lunches for a few days, I have the df grill up some chicken, I made 70 meatballs (bflo has a distributor that doesn't use bread crumbs I can have 10 tiny meatballs for like 8 carbs! yum) with a little sause, again I hunted for a low carb sause and found one and I doctor it up with some seasonings of my own. I buy sausage ( little salty, but good, I eat that once a week) antipasto salads ( not sure that everyone knows what the means?) that is a salad with olives, toms, pepperoni, pepperchinis, ham, (any lunch meat) cheese with lettuce. with your choice of dressing...I am into ranch right now, I am eatting this very salad as I type this...lol Lean cuisine has a steak tips and brocolli meal. like 9 carbs in it, that is good. Again not all of the time, because of the soduim....... ugh have to watch everything. Good Luck

| Hi! I like to go here for recipes: http://www.genaw.com/lowcarb/index.html She has a TON of great recipes, plus she posts all nutritional info, comments on how she liked a dish and pictures! She has a bunch of "casserole" type dishes that I really like, because you cook once and then can eat that for several days. Right now I'm addicted to her Mexican Spinach Casserole Deluxe... here's the link: http://www.genaw.com/lowcarb/mexican...le_deluxe.html Don't be fooled by the picture... it's much tastier than it looks. I hope this helps you!

| Easy snack foods: Ham and/or cheese rolled up in lettuce leaves Tuna or egg salad in a cup Hard boiled eggs Celery stuffed with cheese or dipped in sour cream Bell pepper strips and dip Spinach "bread" is nice for sandwiches: 1 10-oz carton of frozen spinach, thawed and drained 4 eggs season to taste (I use salt, pepper, garlic powder, italan seasoning) 1-2 TBS of grated hard cheese like parmesan. Slightly beat the eggs and add the spinach and seasonings. Pour into a well greased 9x9 pan (I like to line the pan with Reynolds Release tin foil). Sprinkle grated cheese over the top. Bake at 375 degrees for 20 minutes. Cool slightly and cut into quarters. Each quarter can be used as a "slice" of "bread" to hold all your sandwich fixings. This is really filling and nutritious. Sometimes I cut in into triangles and serve it hot from the oven as a side dish with dinner.

| Hi Teelbee! I remember you from last time I was here. Those spinach "breads" sound GREAT!! Are they soft like bread or kind of crunchy like chips? maybe depends on cooking time? thanks everyone for all the ideas!! I'm starting to plan for the new year!

| My fav snack is to cut an avocado in half take out the seed and place a spoon or two of mixed nuts/seeds etc in. I usually use sunflower seeds, pumpkin seeds, salt and pepper, sesame seeds, a few cashews, walnuts or whatever I have around I make a jar of them up and then I also sprinkle them on my salads or sometimes nibble on them when having a drink or two instead of potato chips. Another good idea for lunch is a crustless quiche cos you can put anything you like in and then just mix up some egg sprinkle with cheese and cook and then eat hot or cold with a salad or on it's own i usually make little ones in muffin tins and it is easy to have one or two for lunch or breakfast or for a snack... |

| ok, I'll get to the store in the next few days and get some frozen spinach. I have fresh...but I'm thinking that wouldn't work so well... I LOVE the deep dish pizza quiche, but I don't ever do the pizza part, just the basic part of it. Add-ins: olives, pepperonis, few onions, sausage, etc!
